Chef Michel Bras is famous for his "creative" cuisine at his three-starred restaurant in Laguiole, and his popularity extends to Japan, where he also runs another restaurant. The collaboration between Kai and Michel Bras was therefore a natural step, with the aim of offering high-performance, durable and aesthetically pleasing knives and Utensils suitable for both professional and domestic use.

When you choose Kai Michel Bras knives, you're choosing durability and top-level performance. The chef himself designed the knives the way he likes them: easy to sharpen, balanced and visually appealing. To cook properly, the chef recommends knives that are neither too light nor too heavy, and that are ergonomically designed to be so easy to handle that they become a continuation of your hand. You choose knives designed by a great name in the culinary arts, using quality materials and made in Japan.

This fish knife lets you carefully slice fish while keeping the flesh and taste intact. Did you know that in Japan, the way a fish is sliced is considered to influence its flavor? This blade can also be used to slice sensitive, thin and supple foods requiring delicate handling, such as charcuterie. Its 15cm size is long enough for medium-sized pieces and ensures impeccable handling.

The blade of this knife is made of VG10 steel, a stainless steel considered one of the best in the world. Its high corrosion resistance and chromium content of over 13% make it considered a stainless steel. But VG10 steel is also appreciated for its ability to give knives a razor-sharp edge, thanks to its high carbon content. Let's take a closer look at its composition: carbon ensures a good level of hardness for a high-quality cutting edge, followed by chromium for corrosion resistance, then molybdenum, which increases the blade's hardness and strength in the face of impact and corrosion. Finally, vanadium and manganese also enhance wear and abrasion resistance.

The result is 63 HRC on the Rockwell scale, for a razor-sharp edge that remains durably sharp after several uses. The 3 layers of steel combine strength and flexibility to achieve a good compromise between ease of sharpening and good edge retention. You can maintain the blade with a Sharpening stone if required. Be careful, however, not to use the knife on excessively hard foods, such as bones, to avoid weakening the blade.

The blade has a titanium coating that protects the steel and makes it non-stick, making it ideal for cutting pieces of fish without them sticking to the blade.

For an impeccable finish, the brand name has been affixed to the cutting surface, along with the words "Made in Japan", a guarantee of quality.

The handle is made from composite wood for extra strength against impact and easy maintenance. Its weight is designed to be neither too light nor too heavy, so it's perfectly manageable.

Michel Bras chose a "chestnut" shape, taken from Japanese tradition, to create an ergonomic handle that fits the shape of your hand without tiring it, despite repeated use. It makes the knife so easy to handle and use in the kitchen that it becomes a natural extension of your hand.

The handle also features a stainless steel bolster and base, further enhancing its robustness. The base is engraved with the name of its designer as a signature.

Knife care :

Always clean the knife by hand (the dishwasher is forbidden, as is soaking it in the sink) and wipe it with a dry cloth immediately after cleaning. Finally, you can store it carefully on your magnet bar, in a block or in a drawer after putting it in its sheath.
