The Kai Michel Bras slicing knife ensures incredibly efficient and precise cuts on your meats!
Chef Michel Bras is famous for his "creative" cuisine at his three-starred restaurant in Laguiole, and his popularity extends as far as Japan, where he also runs a prestigious restaurant. The collaboration between Kai and Michel Bras was therefore a natural step, with the aim of offering high-performance, durable and aesthetically pleasing knives and Utensils suitable for both professional and private customers.
Kai Michel Bras knives are a perfect compromise between aesthetics, efficiency and durability. The chef has designed knives the way he likes them: easy to sharpen, balanced and made from beautiful materials. Michel Bras uses knives that are neither too light nor too heavy, and that are ergonomically designed to be so easy to handle that they become an extension of your hand. With my Michel Bras Kai collaboration, you're opting for the expertise of a great name in the culinary arts, coupled with the exceptional quality of Kai's world-renowned knives.
This with granton edge slicing knife is your ally when it comes to tearing all your meats, fish and other large foods into pieces. It's perfect for slicing leg of lamb, roast chicken (without cutting the bones!) or sashimi. Its long blade cuts easily into the flesh for a fine, even cut, without damaging the appearance of the food. Cells on the blade create air bubbles to prevent food from sticking. So you can cut beautiful slices as quickly as possible.
The knife features an VG10 steel blade, considered one of the best in the world thanks to its resistance to corrosion and its ability to provide a long-lasting sharp edge. Although a member of the stainless steel family, its high carbon content does not prevent it from giving knives a razor-sharp edge. The final composition is as follows: carbon to ensure a high-quality cutting edge, chromium for corrosion resistance (over 13%), molybdenum to increase the blade's hardness and its resistance to impact and corrosion. Finally, vanadium and manganese provide additional resistance to wear and abrasion.
Its long 23cm blade has a Rockwell hardness rating of 63 HRC. This gives it a razor-sharp edge that lasts, despite repeated use, thanks to its 3 layers of steel. If you feel the need after a while, you can restore its effectiveness by maintaining it with a Sharpening stone when you feel it's needed. Be careful, however, not to use the knife on very hard foods such as bones, to avoid weakening the blade.
It is coated with a layer of titanium that protects the steel and gives the blade greater anti-adhesion properties.
The brand name is embossed on the cutting surface, along with the words "Made in Japan", a guarantee of quality. The logo representing the cistre leaf (a plant growing on the Aubrac plateaux) adds a touch of elegance and authenticity.
The handle is made from wood composite, a material that gives it an aesthetic veined appearance and high resistance to humidity and impact. Its weight is designed to be neither too light nor too heavy, maximizing comfort of use for better cutting.
Michel Bras chose a "chestnut" shape, drawn from Japanese tradition, to create a comfortable, ergonomic handle that won't tire your hand despite repeated use. It makes the knife so easy to handle that it becomes an extension of your hand.
The stainless steel bolster and base strengthen the handle. The bolster is engraved with the designer's name.
The knife is delivered in a wooden scabbard, the designer's intention being to present it in a beautiful case, like a piece of jewelry. This accessory will help you to store your knife with care. A sharpening guide is also included to help you sharpen your knife if necessary.
How to care for your knife :
Wash the knife by hand (it should never be put in the dishwasher) and wipe with a dry cloth immediately after cleaning. You can then store it carefully on your magnet bar, in a block or in one of your drawers after putting it in its sheath.
