The Kai Michel Bras n°1paring knife reflects the fusion of French and Japanese craftsmanship, performance and incredible elegance!
Michel Bras is a renowned chef, both in France (where he runs a three-starred restaurant in Laguiole) and in Japan, where his creative cuisine has been exported to a prestigious restaurant on the island of Hokkaido. The collaboration between this great name in French gastronomy and the renowned Japanese manufacturer Kai was a natural one: the aim being to develop reliable, efficient Utensils for both professional and domestic use.
Kai Michel Bras knives are a perfect compromise between aesthetics, efficiency and durability. Michel Bras explains that he wanted to offer knives that were easy to sharpen, comfortable to use thanks to an ergonomic handle and well-balanced weight (neither too light nor too heavy), yet beautiful to look at like a piece of jewelry. When you choose this range of knives, you're opting for tools designed by a great name in the culinary arts from quality materials and made in Japan.
This paring knife will be your ally for all those little everyday chores: peeling and slicing fruit, dicing, slicing or sticking vegetables, thinning artichokes, chopping onions and herbs - in short, a whole host of small jobs that are essential for everyday cooking!
The steel used here is VG10, an alloy considered to be one of the finest in the world. It belongs to the family of stainless steels thanks to its high resistance to corrosion. This does not prevent it from giving knives a razor-sharp edge, thanks to its high carbon content. Its composition is as follows: carbon ensures a high-quality cutting edge, while chromium, at over 13%, provides corrosion resistance. Molybdenum then enhances the blade's hardness and resistance to impact and corrosion. Finally, vanadium and manganese also enhance wear and abrasion resistance.
The 8cm blade has a hardness rating of 63 HRC Rockwell for a sharp edge that lasts despite repeated use, thanks to its 3 layers of steel. However, you can restore its effectiveness by maintaining it with a Sharpening stone whenever you feel it's necessary. Be careful, however, not to use the knife on very hard foods such as bones, to avoid weakening the blade.
The blade has a titanium coating that protects the steel and makes it non-stick for optimal cutting.
For an impeccable finish, you can distinguish the brand name that has been affixed to the cutting surface, as well as the words "Made in Japan", a guarantee of quality. Also visible on the back of the blade is a cistre leaf (a plant that grows on the Aubrac plateaus), the elegant emblem of the chef's cuisine.
Turning now to the handle, it is made from composite wood for unfailing sturdiness and easy maintenance. Its weight is designed to be neither too light nor too heavy, to maximize comfort of use for better cutting.
Michel Bras chose a "chestnut" shape, drawn from Japanese tradition, to create a highly ergonomic handle that won't tire your hand despite repeated use. It makes the knife so easy to handle and use in the kitchen that it becomes a natural extension of your hand.
The stainless steel bolster and base further enhance the solidity of the handle. The base of the knife is engraved with the name of its designer.
This paring knife is sublimely finished, and the chef has made a point of offering beautiful knives with which you'll never tire of working.
Supplied with a wooden sheath, its designer wanted to present it in a beautiful case, once again like a piece of jewelry. This accessory will enable you to care for your knife as it deserves. A sharpening guide is also included to help you sharpen your knife if necessary.
Knife care :
Wash the knife by hand (never put it in the dishwasher) and wipe it with a dry cloth immediately after cleaning. Finally, you can store it carefully on your magnet bar, in a block or in a drawer after putting it in its sheath.
Opt for an exceptional knife worthy of the greatest chefs with this knife from the Michel Bras collection!
