The Sakai Takayuki Nanairo red 27 cm yanagiba knife embodies the meeting of Japanese refinement and performance. Designed for cutting fish, sashimi and other delicate preparations, its sharp blade and dazzling red lacquered resin handle are equally seductive. A must-have for Japanese cuisine enthusiasts!
Long, precise blade: a Japanese knife designed for performance
Your Japanese kitchen knife has a 27 cm blade, the ideal length for long, even and uninterrupted cuts, particularly when preparing raw fish for sushi or sashimi. Thanks to this length, you can slice in a single, fluid movement, preserving the integrity of the flesh.
The blade is based on a San Maï structure, composed of three layers of steel: a hard core of AUS-8 stainless steel, covered by two layers of softer stainless steel. AUS-8 is a Japanese steel containing around 0.8% carbon, giving it a good balance between hardness, edge retention and ease of sharpening. This hardness of 59HRC Rockwell enables efficient edge retention, without sacrificing the flexibility needed to avoid breakage.
The edge is asymmetrical, sharpened only on one side, typical of traditional Japanese yanagiba knives. This guarantees a clean, effortless cut, particularly suited to right-handed users.
Red octagonal handle: aesthetics, ergonomics and modernity
The handle of your Japanese kitchen knife immediately stands out for its intense red color, obtained by applying a high-gloss lacquer to ABS resin. This modern material is resistant to humidity, temperature variations and stains, while offering a durable alternative to natural woods. The lacquer used accentuates the depth of color and gives a noble, brilliant appearance.
The octagonal shape of this handle provides a stable, controlled grip for prolonged use. Although optimized for right-handers via the cutting edge, the shape of the handle favors neither left nor right hand, guaranteeing excellent ergonomics.
