Description

This 17cmsantoku knife is a versatile, typically Japanese model. It is ideal for cutting fresh herbs, vegetables, pieces of meat (without bone)...It can also be used to cut delicate foods such as tomatoes, thanks to its serrated blade that can more easily penetrate the hard skin.

The blade is made of steel enriched with molybdenum, an element that increases the alloy's hardness while reducing its elasticity and brittleness. Molybdenum also enhances corrosion resistance. It is therefore a central element of the alloy. The blade's micro-toothing extends its cutting edge 5 times longer than a standard blade. If you need to sharpen, do so only on the smooth side of the knife. You can distinguish the Japanese characters linked to the brand on the blade, for even greater authenticity.

The handle is made of black reinforced laminated wood. This lightweight material is easy to care for, ensuring pleasant use for both left- and right-handed users. The handle is completed by two stainless steel rivets, which join the laminated wood to the half-silk blade.

For maintenance, wash the knife by hand, then dry it before storing. It is supplied in a plastic cardboard box.

This thing has an unbelievable cutting edge, you can't help but concentrate when using it, it's also very light at just over 100g, the very fine micro-toothing also makes it very effective with skinned vegetables such as tomatoes, peppers, eggplants etc., and it cuts as cleanly as a smooth blade. This is the one and only brand to produce a blade with such a design, and I hope that they will continue this product with its unique cutting edge. With anti-adhesion cells, it would have been simply perfect.

I tested it with a medium-sized kale. The base was a little harder to cut but otherwise no problem, it cuts well. I think these knives are good value for money and should last because of the type of blade.
