Sabatier Éléphant knives are made in Thiers, France, by the Thiers Issard cutlery company. This cutlery firm has been applying the same traditional know-how since 1884, and offers you top-quality kitchen knives.
The chef's knife features a 20cm blade in 4116 stainless steel. This alloy is highly resistant to corrosion, deformation and wear, as it contains chromium, vanadium and molybdenum. This composition enables stainless steel to reach a hardness of 55HRC for easy maintenance.
The blade of this knife is hot-forged by hand, then immersed in two oil baths: quenching and tempering. These oil baths fix the steel molecules together, giving the blade great strength. Hand forging gives the blade a full tang shape, as it runs the full length of the knife. The blade then passes over a grinding wheel fitted with leather rollers, which sharpen it and give it its cutting edge.
The handle is made of olive wood. This typical Mediterranean wood is characterized by a distinctive grain and a golden color that makes each knife unique. As well as being aesthetically pleasing, olive is a robust wood. For even greater solidity, it is clamped to the blade by 3 brass rivets.
The chef's knife has a round aluminum bolster that gives it good balance and a light grip. Its fine guard ensures safe use of the knife, as it prevents your fingers from slipping on the blade.
This knife should not be washed in a dishwasher. Washing by hand, taking care not to put the handle under water, is recommended as wood does not like humidity. Be sure to dry your knife immediately to avoid damaging it.
