A highly efficient knife blade
This 20cm chef's knife features a blade with a core of 10Cr15CoMoV stainless steel: this top-of-the-range steel already enjoys an excellent reputation worldwide for its durability and cutting performance (it supports a razor-sharp finish, for example). It contains 1.05% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids repetitive sharpening.
The core is then surrounded by 67 layers of damascus. Damascus is a unique method of superimposing various layers of steel (hard and soft) around the blade core. The hard steel reinforces the knife's strength, while the soft steel gives it a slight suppleness (making it less brittle). Beyond its technical advantages, this method creates unique waves on each knife, rippling across the cutting surface for a breathtaking visual effect.
The top of the blade has been press-hammered, creating unique patterns on each blade. Beyond its aesthetic appeal, hammering is appreciated for its ability to increase the knife's non-stick properties (a bit like honeycombing).
You can see that the brand name and range have been laser-engraved on the blade, for even greater authenticity.
The cutting edge has been worked into a V-shape for excellent penetration of food (this shape, combined with quality sharpening, enables the blade to cut rather than break the internal fibers of food, thus respecting its taste). The final sharpening is done by hand, on a strip of leather at a cumulative angle of 30°. The result is formidable: you'll feel it from the very first use - no need to force it!
Finally, the blade has a mirror-polished finish, which adds to its elegance, while making it more resistant to corrosion (because polishing flattens the surface of the steel to make it less porous).
The handle is a very important element in the composition of the Wusaki Damascus 10Cr knife, and is made from olive wood, which has been sanded and treated to be soft and pleasant. This precious wood, with its characteristic fruity scent, contrasts perfectly with the neutral appearance of the steel. Its veins are unique on each knife: prestige multiplied tenfold!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
It has been designed in an original shape, like a sickle, to be very comfortable in the hand and to sit naturally in the palm. In this way, the thumb and forefinger can retain their full strength during use, for absolute control of the knife. Finally, Wusaki handles are slightly longer than the current cutlery market average, to accommodate larger hands.
The base engraved with the Japanese character"Tiger" gives the knife an authentic finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an extra touch of elegance. The detail that changes everything.
How to store and care for this chef's knife
The Wusaki Damascus 10Cr knife is a little jewel: the combination of materials and nuances makes it an exceptional piece of cutting equipment. At once simple and slightly sophisticated, it can seduce the most demanding of cooks!
Each Wusaki knife comes in a top-of-the-range box that protects it from shocks. The elegant box makes it an easy gift for any knife enthusiast.
For care, we recommend gentle hand-washing in lukewarm water with neutral soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection.
Please note: on delivery, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or Bag!
Wusaki knives are manufactured by a small facility located north of the city of Guangzhou, the capital of Guangdong province in Western China.
