Blade technical details
The knife's smooth 16.5cm blade features a SG2 powder steel core, one of the highest-quality alloys on the market. It contains around 15% chromium and 1.3% carbon, offering numerous advantages. Despite its high price, SG2 steel has an average hardness of 63 HRC, synonymous with long-lasting sharpness. This means you don't need to sharpen the knife too regularly with a stone, and despite its high hardness, it's still easy to sharpen if necessary. Finally, its microscopic structure is so homogeneous that SG2 steel is reputed to be extremely pure and therefore highly resistant.
Stainless steel plus is then folded on either side of the core, giving the knife a 3-layer San Maï damascened blade. The result is a knife with enhanced strength. You can see the different layers of steel on the cutting surface.
Finally, the blade is hammered all over the top to further increase its strength. This hammering also helps the cut food to come away from the blade. The Yaxell logo and brand name are also engraved on the blade, adding an authentic, aesthetic touch.
Handle technical details
The blade and handle are joined by two stainless steel bolsters. The handle is made of Pakkawood, a composite of resin and laminated wood that is robust and durable. Pakka wood is known to be rot-proof because it is non-porous. It is also resistant to temperature variations and humidity, making it ideal for use in the kitchen. The visual appeal of the handle is also elegant, thanks to Pakkawood's attractive black hue underlined by golden veining.
The knife's curved shape makes for a comfortable, ergonomic grip. At the center of the handle is a single mosaic rivet representing the traditional emblem of the Japanese samurai family. This mosaic adds to the knife's elegance and tradition.
Finally, the base of the knife features a superb golden engraving of the Ketu kanji as a reminder of the range. Meaning "pure" or "spotless", it's the fine detail that ideally completes this top-of-the-range santoku.
Care instructions
To ensure the long-lasting care of this exceptional knife, we recommend you follow these simple instructions. The knife blade should only be cleaned by hand, avoiding wetting the handle. Use a soft sponge and washing-up liquid in lukewarm water. Dry the knife well with a clean cloth before storing it in a sheath, block or Bag. We advise you to avoid placing it on a magnetized bar, as the hammered blade may cause the knife to fall off.
