The Naniwa Nagura stone (also known as the "dressing stone") is a handy little accessory when sharpening knives with a water Sharpening stone.
It is made of composite material, and has an end grit of 600.
It allows you to clean the stone after sharpening to remove impurities left by the metal of the blade. On grit stones (from 3000), it creates a layer of "sludge" that enhances the polishing effect, ideal for optimal sharpening! To do this, gently rub the surfacing stone on your Sharpening stone until you obtain a slurry.
The height of the stone makes it easy to grip, so you can use it with peace of mind. It should be immersed in water for ten to fifteen minutes before use.
