Description

The model :

This 20cm Kai Shun Classic White chef knife is a versatile knife that's a real asset in the kitchen! It lets you chisel, mince, mince...let your creativity shine through on a variety of foods!

Blade :

The blade is damascened, meaning that it has a rigid steel core surrounded by several layers of soft steel to protect it. The core is made of VGMAX steel, a favorite in cutlery because of its high carbon and cobalt content. These elements increase the steel's strength, so that the knife retains a rigid edge and sharpness for longer. It also has a high chromium content, making it less vulnerable to corrosion than other carbon-enriched steels. It also has a final hardness of around 61 HRC, a very good indication of its rigidity. This allows you to space out your sharpening sessions. This core is then surrounded by 32 layers of softer steel, laid in alternation: this is a damascened blade. These different layers of steel give the blade a slight elasticity (without making it flexible, but precisely to prevent it from becoming too brittle). This also adds character to the knife, which presents a very aesthetic style, with the layers visible on the cutting surface.

Handle:

The Pakkawood handle is made of wood and resin, all heat-compressed. It is guaranteed antibacterial, resistant to temperature variations and humidity. Its special "D" shape has been adapted to perfectly fit the shape of your hand, offering ergonomics and less fatigue during prolonged use. It is colored to give the appearance of ash. This creates a beautiful contrast with the blade, while adding a timeless look to the knife.

Care :

The knife should be washed by hand; this more delicate care will enable you to preserve its initial appearance for a long time. Then wipe with a soft cloth before storing in your block or Bag, or on your magnet bar.

I'd never had a knife in this price range before, and given the budget, I'd done quite a bit of research. What an experience! First of all, it's gorgeous. The white handle goes perfectly with the overall line of the blade, in splendid damascus. It's very chic, uncluttered, sober with a Japanese effect. When you see them, you immediately feel you're in another world... I knew it was going to cut well, but this... this much... So yes, you have to take care of it and be careful when handling it, because everything becomes so easy to cut/uncut that you feel like you're in butter (I've never cut an onion so quickly... and without crying, and the same goes for a sausage, so easy!). It's exceptional. It's effortless, the balance is perfect and the weight impressed me, as the knife is very light. The handle is extremely pleasant, with its right-handed "D" shape. What a pleasure. These are beautiful objects. I bought this chef's knife with the 15cm universal and the 10cm paring knife. This chef's knife is particularly well made. The hand can be positioned either on the handle (it's not too head-heavy, just right) or in pinch grip, with the blade high enough to remain safely on the index finger. In this case, the belly of the blade is clearly present for rocking or even cutting herbs, vegetables, etc... The chef's knife is THE knife. And this one is a work of art for a neophyte like me. I'd been wanting to indulge myself for a long time, but I'd also always seen it as an investment. But given the pleasure I get every time, what can I say? It's brilliant. I'm so pleased with it that I'm thinking of getting the Santoku from the same series. An exceptional knife...
