Description

This 15cm Kai Shun Classic White Universal knife lets you cut fruit and vegetables, as well as mince small pieces of meat (without bone). All in all, it's a versatile knife that's easy to handle thanks to its medium size.

The knife's blade is damascened, i.e. built on a core of rigid steel, surrounded by several layers of soft steel, which protect it.

The core is made of VGMAX steel, an alloy appreciated in cutlery for its high carbon and cobalt content. These two elements increase the steel's hardness, giving the knife a rigid cutting edge that retains its sharpness longer.

It also has a high chromium content, making it less vulnerable to corrosion than other carbon-enriched steels. It also has a final hardness of around 61 HRC, a very good indication of its rigidity. This allows you to space out your sharpening sessions.

This core is then enveloped by 32 layers of softer steel, laid down in alternating fashion: this is a damascened blade. These different layers of steel give the blade a slight elasticity (without making it flexible, but precisely to prevent it from becoming too brittle). What's more, this adds character to the knife, which presents an unmistakable style, with the layers visible on the cutting surface.

The Pakkawood handle is made from heat-compressed wood and resin. It is guaranteed antibacterial, resistant to temperature variations and humidity. In addition, its special "D" shape has been adapted to perfectly fit the shape of your hand, offering you ergonomics and less fatigue during prolonged use.

The handle is colored to give the appearance of ash. This creates a beautiful contrast with the blade, while adding a timeless look to the knife.

The knife should be washed by hand; this more delicate care will enable you to retain its initial appearance for a long time. Wipe dry with a soft cloth before storing in your block or Bag.

I'd never had a knife in this price range before, and given the budget, I'd done quite a bit of research. What an experience! First of all, it's gorgeous. The white handle goes perfectly with the overall line of the blade, in splendid damascus. It's very chic, uncluttered, sober. A Zen, Japanese feel. When you discover it, you immediately feel you're in another world... I knew it was going to cut well, but this... this much... So yes, you have to be careful, because everything becomes so easy to cut/cut that you feel like you're in butter (literally)... It's exceptional. It's effortless, the balance is perfect and the weight impressed me, as the knife is very light. The handle is extremely pleasant, with its right-handed "D" shape. What a pleasure. These are beautiful objects. I bought this one (with which you can do 70% of everything you need in a home kitchen), the chef's knife (ditto... only better, it cuts so much!) and the little paring knife. I've always considered it an investment, but I'm so pleased with it that I'm likely to take the Santoku as well. Magnifique...!!!!
