This 18cm hybridsantoku knife is a versatile model with a typically Japanese shape, appreciated for its maneuverability. It can be used for mincing meat and slicing vegetables, but is particularly appreciated for chopping food, thanks to its special shape which creates a pronounced rocking effect when you handle it.
It enables you to make efficient gestures, for clean, precise cuts. The Kai Shun Kamagata range was created in collaboration with the famous German chef Tim Malzer, and this is not his first encounter with the Japanese manufacturer, as he has already participated in the development of several successful ranges.
The blade is made from satin-finish 1.4116 stainless steel, an alloy highly appreciated in the culinary world for its high chromium content (14.8%). Chromium is an essential element in the fight against oxidation.
The alloy's hardness is around 57/58 HRC on the Rockwell scale. This is a very good ratio between edge life and ease of sharpening. You can maintain it with a Sharpening stone to bring out its full cutting potential.
The shape of the blade contributes to the knife's originality. You'll notice that the tip is more rounded than on a standard santoku. Tim Malzer himself came up with this concept, as it is a shape that would allow for greater maneuverability (he observed it on knife models in Japan). In fact, this is where the series takes its name from, Kamagata meaning "sickle-shaped" in Japanese. You can also make out the chef's personal signature, directly on the cutting surface, marking its authenticity!
The knife's handle is made of black POM, a sturdy, lightweight polymer appreciated for its durability. What's more, it's resistant to temperature variations and knocks.
The slightly domed shape of the handle fits perfectly in your palm, whether you're right- or left-handed. Last but not least, you'll appreciate the logo engraved on the base of the handle: a stylized bull, the hallmark of Tim Malzer at Kai! A detail that makes all the difference.
Care and maintenance:
The knife can be cleaned by hand, using mild soap and a non-abrasive sponge. Then wipe dry with a soft cloth, and store away from moisture.
