Knifeleader presents this exclusive Kai Shun Kamagata Tim Malzer 3-knife case! Each knife in this range is efficient, ergonomic and suitable for everyday use. They are intuitive to use, making them ideal for chefs and hobbyists alike. It enables you to make efficient gestures, for clean cuts.
The Kai Shun Kamagata range was created in collaboration with the famous German chef Tim Malzer, and this is not his first encounter with the Japanese manufacturer, since he has already participated in the development of several successful ranges.
Composition of the case:
- 1 9cm paring knife: recommended for cutting small fruit and vegetables. It enables you to make precise gestures, and is a kitchen essential.
- 1 15cm utility knife: used in the same way as the paring knife, but for larger pieces. It can also be used for mincing boneless meat. It's a versatile knife that's still easy to use thanks to its size.
- 1 18cm santoku knife: this is a versatile model, considered to be the Japanese-style chef's knife. Its slightly curved blade creates a natural rocking motion when cutting.
Blade :
The blade of each of these knives is made of satin-finish 1.4116 stainless steel, an alloy highly appreciated in the culinary world, thanks in particular to its 14.8% chromium content. Chromium is an essential element in the fight against corrosion.
The alloy's hardness is around 57/58 HRC on the Rockwell scale. This is a good ratio between edge life and ease of sharpening. You can maintain it with a whetstone.
The shape of the blade contributes to the originality of the knives in this case. You can see that the end of the cutting surface is domed. Tim Malzer himself came up with this concept, as it's a shape that allows for greater maneuverability when cutting (it's a special shape he observed on certain knives in Japan). This is where the series gets its name from, Kamagata meaning "sickle-shaped" in Japanese.
You can also make out the chef's personal signature, directly on the cutting surface of each piece, which marks its authenticity.
The handle:
Made of black POM, a strong, lightweight polymer appreciated for its durability. What's more, it is resistant to temperature variations and shocks. The slightly curved shape of the handle fits perfectly into your palm, whether you're right- or left-handed.
Last but not least, you'll appreciate the logo engraved on the base of the handle: a stylized bull, the hallmark of Tim Malzer at Kai.
The case:
Made of black synthetic material on the inside and grey on the outside. It features small nets surmounted by elastics to secure the handles of knives or utensils. This storage system is complemented by an upper Velcro fastener, which is placed over your knives with the longest blades, for a double hold.
A protective flap is also fitted over the blades, for added security.
You can easily clean the inner surface with a damp sponge, thanks to the more resistant coating.
Its size allows you to store, for example, 4 large knives (like the santoku) and 3 small knives (like the paring knife).
The case has two clips on the front, like a satchel, to ensure it stays closed. A reinforced front handle makes it easy to grip. Alternatively, you can carry it with a removable, reinforced shoulder strap, allowing you to carry the case on your shoulder, keeping both hands free.
Care :
Knives can be cleaned by hand, using mild soap and a non-abrasive sponge. You can then wipe them with a soft cloth, and store them away from moisture.
