A Yaxell Super Gou Ypsilon Japanese knife is an excellent investment. The knife will be with you for many years, and requires little maintenance, as its high-strength cutting edge means you'll need to space out your sharpening sessions.
You can cut food to perfection, without damaging flesh or fibers. You'll appreciate the time you spend in the kitchen!
This 12cmparing knife is a very handy knife that you can use every day. It's ideal for peeling and slicing fruit and vegetables, and its small, fine blade allows you to work with precision. It's one of the essential knives to have in your cutting equipment.
Here are the features of a Super Gou Ypsilon knife:
- The blade has a core of SG2 steel, a special powder with a fine, high-density structure (this enables it to incorporate more mixed particles into its alloy). Once worked, this special steel is highly rigid, enhancing its cutting qualities (the wire is harder, so the basic sharpening is more thorough). It is also more resistant to humidity than VG10, an already high-performance alloy.
- Next, the SG2 core is protected by 192 superimposed layers of softer steel (96 on each side, making a total of 193 layers including the core in the center). Thanks to this mix of layers, the knife blade offers the perfect combination of hardness and slight suppleness (making it less brittle), and achieves 63 HRC on the Rockwell scale.
- The knife's cutting edge is cut at an angle of 30° (i.e. 15° on each side), whereas the standard angle for a Japanese knife is approximately 34°. With a cutting angle like this, you've got to watch your fingers!
- The engraving on the blade is done entirely by hand by a master cutler. He uses a punch to form the Japanese characters, then taps on them with a small hammer. His expertise adds an extra touch of authenticity to the knife.
- The knife comes with a protective wooden case to protect the blade.
- The handle is made of black micarta with red piping, a material composed of 40% resin and 60% linen. It is resistant to temperature variations. It is also highly resistant to moisture. It has been approved by the US FDA (Food and Drug Administration), making it suitable for professional use. It features a steel base and a single rivet with a mosaic pattern. The result is a rare elegance.

Care: wash the knife gently by hand, then dry it immediately afterwards to protect it from moisture.
