This 12.5cmsantoku knife is a small version of the traditional santoku, the Japanese all-purpose knife. It enables you to cut small fruits and vegetables with precision, or to trim herbs with speed and precision.
Let's take a closer look at the features of a Yaxell Super Gou knife:
The blade
The blade has a core of SG2 steel, a special powder with a fine, high-density structure, which allows it to incorporate more mixed particles into its alloy. This gives it a high degree of hardness, which enhances its cutting qualities (the wire is harder, so the basic sharpening is more thorough). It is also more resistant to humidity than VG10, which is already very good in its field.
Next, the SG2 core is protected by 160 superimposed layers of hard and soft steel (80 on each side). Thanks to this assembly of layers, the knife blade offers the perfect combination of hardness and slight suppleness, reaching 63 HRC on the Rockwell scale. As a result, the cutting edge remains sharp for longer.
Finally, the knife's cutting edge is angled at 30° (i.e. 15° on each side), whereas the standard angle for a Japanese knife is approximately 34°. The result is a razor-sharp edge.
The blade is engraved entirely by hand by a master cutler. He uses a punch to shape the characters, then taps with a small hammer. His expertise adds an extra touch of authenticity to the knife.
The handle
The handle is made of canvas micarta, a material composed of 40% resin and 60% linen. It is resistant to temperature variations. It is also highly resistant to moisture. This special material has been approved by the US FDA (Food and Drug Administration), making it suitable for professional use. It is completed by 3 rivets, for optimum hold.
