Description

A Yaxell Super Gou Ypsilon Japanese knife is an investment that will pay for itself in no time. The knife will be with you for years, and requires little maintenance, its high-strength cutting edge allowing you to space out sharpening sessions. It cuts food to perfection, without damaging flesh or fibers. It will quickly become your indispensable ally.

This 16.5cmsantoku knife is the Japanese all-purpose knife. Its slightly curved blade allows you to cut fruits and vegetables with precision, or carve herbs with speed and precision, creating a natural rocking motion as you use it.

The blade

The blade features a core of SG2 steel, a special powder with a fine, high-density structure (this enables it to incorporate more mixed particles into its alloy). Once worked, this special steel is highly rigid, enhancing its cutting qualities (the wire is harder, so the basic sharpening is more thorough). It is also more resistant to humidity than VG10, an already high-performance alloy.

Next, the SG2 core is protected by 192 superimposed layers of softer steel (96 on each side, for a total of 193 layers including the core in the middle). Thanks to this mix of layers, the knife blade offers the perfect combination of hardness and slight suppleness (making it less brittle), and achieves 63 HRC on the Rockwell scale.

Finally, the knife's cutting edge has been made at an angle of 30° (i.e. 15° on each side), whereas the standard angle for a Japanese knife is approximately 34°. With a cutting angle like that, you'll have to watch your fingers!

The engraving on the blade is done entirely by hand by a master cutler. He uses a punch to form the Japanese characters, then taps on them with a small hammer. His expertise adds an extra touch of authenticity to the knife.

The knife comes with a protective wooden case to protect the blade.

The handle

The handle is made of black micarta with red piping, a material composed of 40% resin and 60% linen. It is resistant to temperature variations. It is also highly resistant to moisture. It has been approved by the US FDA (Food and Drug Administration), making it suitable for professional use. It features a steel base and a single rivet with a mosaic pattern. The result is a rare elegance.

General

The knife should be gently cleaned by hand, then wiped dry and stored away from moisture.

Finally, we can't help but appreciate its unique style. Every element of the knife rivals in refinement, between the damascus, the polishing, the engraving and the mosaic rivet... you have an exceptional knife!

A good enough knife, but not good enough for the price
language rating 6
This knife is expensive, there's no hiding it. For its price, I was hoping for better packaging: when I received it, the tip of the knife was sticking out of the box (I should point out that this has nothing to do with the packaging of the CouteauxduChef team, which has always been very efficient and rigorous). What's more, it's not perfectly balanced. Nevertheless, the aesthetics are pleasing, the blade's hardness is indeed as indicated, its sharpness is indisputable (although, like all knives, a little sharpening before the first use is not negligible.), and finally, the breeze in the hand is pleasant. All in all, a good knife at a somewhat high price.
Answer: Hello, Thank you for taking the time to leave a review! It's true that a nice wooden box would have been much nicer for this kind of high-end knife :/ We're sorry that the tip pierced the packaging during transport, but reassured that the knife was not damaged. We remain at your disposal for any request :) The Couteauxduchef team

As a sushiman working with miyabi and kasumi knives, I decided to go for yaxell. I'm not at all disappointed: a top-quality knife well worth its price, sliced like a katana (watch your fingers) and delivered in a wooden case. Couteauduchef is a very good site.
