This hardness means the blade needs sharpening less frequently than standard steel blades. It will wear less quickly than other blades, and cutting quality is of course greatly enhanced. VG5 is very similar to VG10 steel, but has the advantage of being more resistant to corrosion(which doesn't mean it's rustproof!). To keep a sharp edge, you'll need to opt for gentle sharpening with a double-sided whetstone, preferably with a 3000/8000 grit. A more flexible steel covers this hard core to balance suppleness and hardness.
When using this knife, you'll notice that hammering is not just a question of design. In fact, the small indentations act as honeycombs: when cutting your food, they are less likely to stick to the blade than with smooth blades, making cutting much more pleasant.
