Opt for the finesse of Japanese design with this Tamahagane Tsubame paring knife!
The Tsubame range is a prodigious showcase for Japanese craftsmanship. Did you know that tamahagane is a steel used in Japanese sword-making? The reputation of the sharpness of samurai swords is well known, and speaks volumes for the quality of Tamahagane blades.
The blade of this paring knife measures 12cm: this blade will enable you to work on small and medium-sized fruits and vegetables. Its versatility is a real advantage: every cook needs a paring knife!
The sharpness of this knife will delight you from the very first use. Made from VG5 steel, the core of the blade has a fairly high carbon content(0.7% - 0.8%), giving it a beautiful hardness. This hardness means less frequent sharpening and incomparable cutting quality. VG5 is very similar to VG10 steel, but is slightly more resistant to corrosion. Rockwell hardness is set at 59 HRC, a level requiring gentle sharpening with a 3000/8000 grit Sharpening stone. This core is covered with a softer steel to protect the VG5 and balance hardness and flexibility.
Hammering the blade is both aesthetically pleasing and extremely useful! The little hollows are similar to honeycombs: when cutting your apple or tomato, you'll notice that the food won't stick to the blade, making cutting more pleasant and your work faster.
The knife handle is made from micarta. This material is a blend of resin and paper, making it extremely strong and hygienic. Each handle has a different gray-black veining: buying a Tamahagane knife is a guarantee of owning a unique knife! The knife can be quickly cleaned by hand, using a sponge and a soft cloth.
This paring knife has the undeniable qualities that every cook hopes for! Professionals and Japanese knife enthusiasts alike will love it. Display your Tamahagane Tsubame knives on a magnetic bar or block to impress your guests!
