Cook like a top Japanese chef with this chef knife from the Bamboo Kyoto range!
Tamahagane Bamboo Kyoto Japanese knives have all the qualities you'd expect, so you won't be disappointed! Remember that in Japan, the term Tamahagane refers to the traditional steel used to make swords, which says a lot about the sharpness of these knives.
The blade of this Bamboo kyoto chef's knife measures 24cm, enough to cut fine cuts of meat and large fruits and vegetables such as watermelons.
This knife cuts so well, of course, thanks to the steel used to design the blade. VG5 has many qualities, and its properties are very similar to those of VG10 steel, except that it contains less cobalt and is more resistant to corrosion. The carbon content is between 0.7% and 0.8%, making it even stronger. This hard, solid VG5 steel core is wrapped in a softer steel to give the blade a little flexibility. This softer steel is folded over itself to form 63 layers of damascus, which is how you get this kind of visually appealing blade. As well as being aesthetically pleasing, it is also extremely sharp, enabling you to be faster in the kitchen and, above all, to take immense pleasure in preparing delicious meals for your customers or guests.
These different properties give the blade an HRC hardness of 59 on the Rockwell scale. This hardness is synonymous with high quality, making the need for sharpening much less regular than for a softer blade. Their service life is also greatly extended, so you'll be making a long-term investment with this kind of knife.
The knife's stainless steel handle is highly resistant to corrosion, an advantage if you work in a professional kitchen, as maintenance is quick and easy. Stainless steel is highly hygienic, absorbing no bacteria and cleanable in the blink of an eye. The design of the handle is original and strongly reminiscent of the origins of this Japanese knife. It has been shaped to create a bamboo effect, combining steel and nature.
This chef's knife has all the qualities to earn its place in your kitchen. Showcase it on a magnetic block or bar, and its aesthetic appeal will make it a real eye-catcher! Whether you're a professional chef or a passionate cook, Tamahagane Bamboo Kyoto knives are for you.
