Shimomura Un-Ryu knives are manufactured by Shimomura Cutlery in Japan. Founded in 1874, the company initially specialized in the design of agricultural tools. Then, in 1957, they were among the first to enter the new field of stainless steel knives. They use their know-how and high-precision processing technology to produce blades suitable for both professional and private use.
The Un-Ryu 12cm utility knife is ideal for slicing fruit and vegetables, but also for mincing boneless meat! It's a perfectly versatile knife that's still easy to handle.
This knife features a blade made of VG10 steel, a top-of-the-range Japanese alloy renowned worldwide for its many qualities: cutting efficiency and long-lasting sharpness! Composed of carbon and cobalt, it achieves an HRC hardness of 60, giving it excellent edge retention for longer sharpening intervals.
The blade is damascened: as Japanese swords were forged in the past, it is made up of several layers of soft and hard steel covering the core, of which there are 33 here. These layers consolidate the blade, while adding suppleness to make it less brittle during use. While damascus is a technical feature, it is also visually appealing. The damascus on Un-Ryu knives features a mist-like pattern.
The handle is made of reinforced laminated wood, i.e. it is composed of several layers impregnated with resin for greater strength. The handle is lacquered for protection and polished for a more comfortable grip. The light hue of the handle is a traditional Japanese color. Finally, 2 rivets reinforce the handle. The bolster, which links the blade to the handle, is made of steel, providing balance, strength and an aesthetic finish.
Shimomura Un-Ryu knives are hand-sharpened on a water stone by a craftsman. You'll feel their efficiency right from the first use!
We recommend cleaning by hand, under lukewarm water with a neutral soap, wetting the handle as little as possible, as wood does not like to be dampened. Then simply wipe dry with a soft cloth and store in a dry place, making sure there are no further traces of moisture. Careful maintenance after each use will ensure that your knife retains its original appearance for a long time to come.
