A BEAUTIFUL DAMASK BLADE

The blade of Shimomura Un-Ryu knives is made of VG10 Japanese steel in the center. This top-of-the-range alloy is internationally renowned for its cutting quality and long-lasting edge! VG10 steel is composed of carbon and cobalt, giving it an HRC hardness of around 60 on the Rockwell scale. A hardness index of this magnitude makes the cutting edge long-lasting, allowing you to space out your sharpening sessions. As for the aesthetics of the blade, it is damascened, i.e. it is made up of 33 layers of soft and hard steel that alternate to cover the heart of the blade. This same process was used to forge Japanese swords in the past! On the one hand, it provides technical characteristics: it consolidates the blade, while at the same time giving it suppleness so that it is less prone to breakage during use. On the other hand, damascus has a real aesthetic effect, adding a unique touch to the blade!

A WOODEN HANDLE FOR AN IDEAL GRIP

Made from reinforced laminated wood, the handle of Shimomura Un-Ryu Japanese knives is composed of several layers impregnated with resin, enhancing its strength and durability. The handle has been coated with a lacquer to protect it and polished for a more pleasant feel and better grip during use. Its light color is reminiscent of the traditional Japanese hue of Japanese knives. To reinforce the handle, 3 rivets run the length of the handle. Finally, the steel bolster forms the link between the handle and the blade: it balances the knife, makes it stronger and gives the piece a final finish. In other words, these Japanese knives are perfect for your kitchen!
