Shimomura Un-Ryu knives are made in Japan by the cutlery firm of the same name. Founded in 1874, Shimomura specialized in the manufacture of agricultural tools. In 1957, they were among the first to enter the new field of stainless steel knives. Their know-how and high-precision processing technology result in efficient blades suitable for both domestic and professional use.

The blade is made from VG10 steel, a top-of-the-range Japanese steel renowned worldwide for its cutting quality and long-lasting sharpness. This steel is notably composed of carbon and cobalt, giving it an HRC hardness of 60 on the Rockwell scale. Such hardness makes the cutting edge long-lasting: sharpening doesn't have to be done too regularly!
The blade is damascened, i.e. it is made up of 33 layers of soft and hard steel around the heart of the blade, as Japanese swords were forged in the past. This consolidates the blade, while at the same time giving it a slight suppleness that makes it less brittle in use. Beyond its technical advantages, the mist-shaped damascus of Un-Ryu knives gives them a real aesthetic appeal.
The handle, meanwhile, is made of reinforced laminated wood, with several resin-impregnated layers for enhanced strength and durability. The handle is lacquered to protect it and polished for a better feel and grip. The color of the handle is reminiscent of traditional Japanese style. Finally, 3 rivets reinforce the handle and the knife as a whole. A steel bolster forms the link between handle and blade, balancing the knife, making it stronger and providing a final aesthetic finish.

We recommend cleaning by hand, under lukewarm water with a neutral soap, wetting the handle as little as possible, as wood does not like to be dampened. Then simply wipe dry with a soft cloth and store in a dry place, taking care to ensure that there are no further traces of moisture. Careful maintenance after each use will ensure that your knife retains its original appearance for a long time to come.
