The Un-Ryu 21cmBread knifehas a semi-serrated blade: it is smooth and has serrations at three different points on the blade. This makes it ideal for cutting through the crust and crumb of your various breads and baguettes with ease. The blade is made of VG10 steel, a top-of-the-range Japanese alloy renowned worldwide for its efficient, long-lasting cutting edge and ease of sharpening. Composed of carbon and cobalt, VG10 steel reaches a hardness of 60 HRC, giving it good edge retention for longer sharpening intervals.
The blade is damascened, i.e. made of several layers of steel, as Japanese swords were forged in the past. In this case, the core is surrounded by 33 layers of soft and hard steel, consolidating the blade while providing a certain suppleness to make it less brittle in use. While damascus is a technical feature, it is also visually appealing. The damascus of Un-Ryu knives features a mist-like pattern.
The handle is made of reinforced laminated wood, with several layers impregnated with resin to improve strength. The handle is lacquered and polished for a more pleasant grip. The light hue of the handle is a traditional Japanese color. To reinforce the knife as a whole, 3 rivets run the length of the handle. The Bolster, which links the blade to the handle, is made of steel, providing balance, strength and an aesthetic finish.

Shimomura Un-Ryu knives are made in Japan by Shimomura Cutlery. Founded in 1874, the company initially specialized in the manufacture of agricultural tools. In 1957, they became one of the first companies to enter the new field of stainless steel knives. They use their know-how and high-precision processing technology to produce blades suitable for both professional and private use.
We recommend cleaning by hand, under lukewarm water with a neutral soap, wetting the handle as little as possible, as wood does not like to be dampened. Then simply wipe dry with a soft cloth and store in a dry place, ensuring that there are no further traces of moisture. Careful maintenance after each use will ensure that your knife retains its original appearance for a long time to come.
