Description

The Makoto Kurosaki universal knife for precision cutting

The Makoto Kurosaki universal knife is a small , handcrafted 13.5cm knife designed for fast, precise, everyday use. Its short, thin blade allows you to perform controlled gestures, whether slicing onions, fruit or small fish fillets. Forged at Takefu Knife Village, this all-purpose knife offers versatility, finesse and ease of use.

Handcrafted by Makoto Kurosaki, it combines the efficiency of technical steel, the beauty of the hand-forged pattern, and the pleasure of a perfectly balanced grip.

A short, hammered, high-performance blade

This knife features a 13.5cm blade, built using the damascening method: a central core of VG7 steel is surrounded by several outer layers of softer stainless steel, forming the damascened structure. VG7 stainless steel is a Japanese alloy containing around 1% carbon, ensuring a very sharp, durable and easy-to-sharpen edge.

Rockwell hardness is 61 HRC, enabling this blade to retain a sharp cutting edge longer than a conventional European knife. The damascus finish provides greater resistance to stress and better protection against corrosion.

The upper part of the blade is hand-hammered using the Tsuchime method, producing a punched effect. These regular impacts reduce the adherence of food to the blade and facilitate its detachment, for rapid cutting without slowing down.

The satin-finish provides an attractive visual appearance and a smooth cutting surface, while theflat cutting edge guarantees linear, controlled penetration of the food.

A traditional handle designed for ergonomics

The handle of this VG7 damascus Japanese knife is made from walnut wood, a robust and naturally stable species. It is pleasant to the touch and well suited to the conditions of a professional or domestic kitchen. Its octagonal shape provides a secure, comfortable grip, suitable for both left- and right-handed users.

This typically Japanese shape ensures a firm, non-slip grip, even after several minutes of cutting. The dense, elegant ebony bolster reinforces the knife's structure while adding visual and functional balance.

Every junction between the materials is carefully adjusted by hand with wood paste, reflecting Makoto Kurosaki's artisanal know-how.

Caring for your VG7 damascus japanese knife

This knife should always be washed by hand, never soaking in the sink. Use a soft sponge and non-aggressive soap. Dry immediately after use to avoid surface oxidation. Under no circumstances should the knife be put in the dishwasher.

For storage, use the knife case or choose a knife block, magnetic bar or protective sheath. Regular sharpening on a Japanese stone is recommended to keep the edge at its optimum level.

Makoto Kurosaki: craftsman of the Japanese edge

Makoto Kurosaki is a Japanese blacksmith based in Echizen, in the famous Takefu Knife Village. The older brother of Yu Kurosaki, he trained with master Yoshimi Kato. He acquired a remarkable technical rigor that he now applies to his own series, produced entirely by hand. Makoto Kurosaki embodies a new generation of Japanese craftsmen who perpetuate the art of forging while developing their own style.

Makoto forges his knives in small series, by hand, from the forging of the blade to the final polishing, with meticulous attention to every detail: choice of steels, heat treatments, hand hammering, handle adjustment... All with respect for Japanese traditions, but with an assertive personal touch.

The series from which this VG7 damascus Japanese knife is taken is a perfect illustration of this approach: to offer high-performance, long-lasting and aesthetically pleasing kitchen knives. Meticulous finishing, comfortable handles and elegant blades make these knives prized by connoisseurs of artisanal cutlery.
