Made in Japan by Tsunehisa Cutlery, the Wusaki Yaketa VG10 nakiri knife is ideal for everyday food preparation, with a blade designed specifically for cutting vegetables. Its straight profile facilitates vertical movements, push-cut slicing, and precise chopping of ingredients.
A precise and durable VG10 blade
At 17 cm long, the blade offers a cutting surface suitable for vegetables of various sizes. The nakiri profile, recognizable by its straight cutting edge and slightly rounded tip, is particularly well-suited for slicing leeks, julienning carrots, cutting zucchini, or chopping herbs.
The damascene blade is built around a core of Japanese VG10 steel containing approximately 1% carbon. This composition produces a fine, precise cutting edge, ideal for clean cuts. The hardness of 60 HRC ensures the blade retains its edge well over time, while maintaining sufficient durability for regular use.
VG10 steel also offers good resistance to corrosion and wear. It requires minimal maintenance, provided it is washed and dried after each use. The hammered upper surface adds a decorative texture to the blade. Its indentations can also help prevent certain foods from sticking while cutting. The mirror-polished finish accentuates the damask pattern’s luster and makes the surface easier to clean.
A charred oak handle that feels comfortable in the hand
The handle is made of charred oak, a wood prized for its strength and natural appearance. The surface treatment creates a unique contrast between the light tones and the darker shades of the wood. As a result, each handle may exhibit visual variations due to its grain pattern and degree of charring.
Oak is highly resistant to moisture and warping. It is therefore well-suited for a handle intended for regular use in the kitchen, provided it is thoroughly dried after washing.
The octagonal shape provides a stable grip and is suitable for both right- and left-handed cooks.

Tips for maintaining the edge
Wash the knife by hand with a soft sponge and mild dish soap. Avoid the dishwasher, abrasive cleaners, and prolonged soaking, as these can damage the blade and the wooden handle.
After cleaning, immediately dry the blade and the oak handle with a clean cloth. Then store the knife in a knife block, on a magnetic strip, or in a suitable sheath. Use it exclusively on a wooden cutting board or one made of a soft material.
