Learn more about the blacksmith:
Yu Kurosaki is a young blacksmith practicing in Echizen province, Japan. Located in the famous Takefu Knife Village , his workshop enables him to work daily on a wide range of knives.
The area is also home to a large number of blacksmiths, who can share their know-how and techniques. What's more, it's a very popular area for apprentices in search of knowledge and a master to teach them all about traditional expertise!
Kurosaki San began his training in the early 2000s. He worked with Master Kanehiro for just over 10 years, learning forging, sharpening... It was after receiving orders from customers who were very satisfied with his knives that he decided to launch his own workshop, with the support of his master.
He also trained with the renowned Hiroshi Kato San, a recognized master blacksmith and one of the founding members of Takefu Village.
From now on, Yu Kurosaki San will instruct his apprentice, so that one day, he himself can open his own workshop.
Kurosaki San is renowned for the original work he does on his blades, as you can see from the models we offer on our site!
The Bunka Yu Kurosaki Fujin knife
This 16.5cm Bunka knife is a typically Japanese all-rounder. It can be used to cut vegetables of any size, meat (without bone), herbs... In short, it can be used for a wide range of cuts, such as chopping, mincing and mincing. What's more, its original shape gives it a lot of character. It looks a bit like a traditional sword!
The blade of the Kurosaki Fujin knife is forged, which means it is formed from a single piece of steel. This is heated, then the blacksmith grips it with pliers and passes it under the mechanical press, turning it regularly to gradually form the blade as it is. This precision work increases the knife's strength, as the blade will not have any weld points.
The core of the blade is made of SG2 stainless steel, a high-end alloy renowned for its strength. Its hardness of around 63HRC on the Rockwell scale guarantees that the cutting edge will hold for a long time. What's more, thanks to its ability to be honed to a razor-sharp edge, it enables effortless, clean cuts. The use of this "powder" steel also offers the advantage of a more uniform microscopic structure, considerably reducing the risk of chipping and deterioration.
Next, this core is enveloped in a softer layer of steel that folds in on itself: this is San Maï construction. You can see the superimposed layers on the lower part of the cutting surface. In addition to providing a very attractive visual, the San Maï makes the blade "softer", i.e. less brittle.
The cutting edge is hand-finished on a grinding wheel to guarantee excellent cutting quality from the very first use.
The upper part of the blade has been hand-hammered to create a unique bevelled effect! This is what makes Kurosaki knives so unique. The brand name has also been engraved on the cutting surface, attesting to its authenticity.
For a pleasant, durable handle, we use sandalwood, a fine-grained wood that's light in the hand. Its octagonal shape matches the shape of your palm, giving you marked control of the knife as you cut. A black pakkawood bolster joins the blade and handle, providing a beautiful contrast.
Hand-washing is imperative. Then wipe with a soft cloth, before storing away from moisture. It comes in a sober but timeless cardboard box.
It is important to stress that quantities are limited, due to the origin of the knives and the capacity of the blacksmith, who carries out all operations by hand.
