This 12cm Zwilling Pro steak knife is a must-have for any table. Its smooth blade will enable you to effortlessly cut meats (steaks, poultry, roasts...), without damaging the flesh. Taste is preserved!
The blade is forged using Zwilling's SIGMAFORGE process, i.e. it is cut from a single piece of steel, for greater strength (as there are no sticking points). The alloy used for this is stainless, and enriched with carbon and chromium: this higher concentration increases the knife's strength and resistance to corrosion.
In fact, its final hardness is between 56/58 HRC, so the cutting edge remains stronger, but the steel is still easy to maintain, for example with a Sharpening steel. A few passes over it and you're done. In fact, it's the quickest solution in professional kitchens!
Heat treatment of the blade is based on the FRIODUR method: the steel is immersed in ice to bring down its temperature rapidly. The aim is to further increase the steel's strength and hardness. This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use (the knife is not overly rigid).
Sharpening is carried out in Profil V-Edge (i.e. with a "V" shape), at 15° on each side of the blade. The cutting edge is sharp, and rivals even some Japanese knives (since the angle of a Western knife is usually around 34°).
The rounded, delicate bolster links up with the black synthetic handle. It is completed by 3 rivets that secure the full tang blade inside. Optimum comfort for left- and right-handed users alike.
Beyond its performance, this knife series is also recognizable by its clean, sober design. It was created by Northern Italian designer Matteo Thun.
To care for your knife, we recommend hand-washing it and drying it immediately with a soft cloth, to maintain its appearance and performance.
So opt for Zwilling efficiency, and renew your table at its best!
