Description

This 26cm slicing knife is part of the Zwilling Pro range. Its function is as follows: to slice your cuts of meat, such as a large ham, with precision.

Its imposing blade is made from a stainless steel alloy enriched with carbon and chromium. Why choose these two elements? Quite simply because carbon is essential to the knife's hardness, while chromium is the anti-corrosion trump card.

All in all, the knife's hardness stands at -+ 56/58 HRC on the Rockwell scale. The cutting edge is pronounced, and holds up better over time despite cutting. It is easy to maintain with a Sharpening steel (which should be of a size equal to or larger than the blade in question).

The SIGMAFORGE technique ( Zwilling's own) produces a forged blade, formed from a single piece of steel. This avoids too many bonding points, and therefore increases the knife's strength and balance.

Heat treatment is based on the FRIODUR method (specially developed by Zwilling): the steel is plunged into ice to bring down its temperature almost brutally (after it has been heated). The aim is to further increase the steel's strength and hardness. This technique also perfects the cutting edge, giving it a slight suppleness that makes it pleasant to use.

Sharpening is carried out using the V-Edge profile (i.e. a "V" shape), at 15° on each side of the blade (a total of 30°). The cutting edge is sharp, and rivals even some Japanese knives (since the basic angle of a Western knife is generally 35°).

The soft Bolster, delicately hollowed out on the sides, perfectly bridges the gap between the two parts of the knife. It is pleasant to the touch (a brand innovation, adding the right design touch). The handle, meanwhile, is made of black synthetic material, with 3 additional rivets securing the full tang blade inside. Comfort is optimal for both left- and right-handed users.

The sleek design of this range was created by Northern Italian designer Matteo Thun. It adds cachet to the range, giving it a timeless character.

To care for your knife, we recommend hand-washing it and drying it immediately with a soft cloth, to maintain its appearance and performance.
