The blade of this Zwilling Pro 18cmsantoku knife is made of stainless steel. The latter has been enriched with carbon and chromium, as these two elements have a direct impact on the knife's corrosion resistance and strength, which are both enhanced!
Its Rockwell hardness is around 56/58 HRC: not only is the cutting edge effective over the long term, but it's also easy to maintain if necessary (with a Sharpening steel, for example, in a few quick, precise strokes).
The blade has been forged using the SIGMAFORGE process (a Zwilling process): it is formed on a single piece of steel, which avoids too many sticking points, thus increasing the knife's strength and balance.
FRIODUR tempering is a special Zwilling heat treatment, which consists of immersing the steel in ice to lower its temperature. Its purpose is to further increase the steel's strength and hardness, already enhanced by the alloy. It also perfects the cutting edge, giving it a little extra flexibility when cutting.
The V-Edge profile sharpening (i.e. with a "V" shape) is at 15° on each side of the blade. The cutting edge is pronounced, and rivals even some Japanese knives (since the average angle of a Western knife is 34°, and here we're at a cumulative angle of 30°). As a result, food fibers are not broken: they are sliced cleanly, and taste is preserved.
This Zwilling Pro18cm santoku knife is the Japanese equivalent of the Western chef's knife. It's the multi-purpose knife par excellence: it slices, chops and minces, thanks to its slightly curved blade that creates a pleasant rocking effect as you cut. What's more, its cutting surface is with granton edge, which enhances the non-stick properties of the steel, so food sticks less when sliced.
Its slightly curved bolster forms the link between the blade and the handle. It is soft and pleasant to the touch, and helps to keep fingers from slipping on the cutting edge. The handle, meanwhile, is made of black synthetic material, with 3 rivets securing the full-silk blade inside. Comfort is optimal for both left- and right-handed users.
