The cleaver is a cutting utensil specialized for mincing meat. Its wide, heavy blade enables you to slice pieces efficiently, with just a few quick lifts. You can slice the flesh of large pieces of meat with ease. What's more, this Zwilling Procleaver is based on German Zwilling technology, so you can count on its reliability!
The blade is made of stainless steel, a proprietary alloy enriched with carbon and chromium. These two elements have a direct impact on the cleaver's corrosion resistance and strength.
Rockwell hardness is around 56/58 HRC: the cutting edge not only performs well over time, but is also easy to maintain (when the need arises, you can use a Sharpening steel).
The blade is forged using the SIGMAFORGE process and is extremely strong, being formed from a single piece of steel, thus avoiding too many welding points.
FRIODUR tempering is Zwilling's own heat treatment, in which the steel is immersed in ice to immediately lower its temperature. Its purpose is to further increase the strength and hardness of the steel already enhanced by the alloy. It also perfects the cutting edge, giving it a little extra flexibility when cutting.
The V-Edge profile ("V" shape) is sharpened at 15° on each side of the blade (a total of 30°). The sharp cutting edge rivals that of certain Japanese knives!
This cleaver features a slightly curved Bolster that links the blade to the handle. It is soft and pleasant to the touch. The handle is made of black synthetic material, with 3 rivets securing the full tang blade inside. Comfort is optimal, guaranteed ambidextrous.
Beyond its performance, this series of knives is also recognizable by its sleek style, developed by Italian designer Matteo Thun. The unadorned appearance enhances a totally timeless design!
