The truffle Kitchen mandolin features a Nitro-B forged stainless steel blade. This is a nitrogen-enriched alloy that has benefited from special heat treatment. The Kitchen mandolin has high hardness, excellent cutting edge and consistent cutting performance.
A rare feature of this Kitchen mandolin is its fixed cutting edge. This is no accident: this unique feature guarantees perfectly even slice thickness. For Ambrogio Sanelli, this represented a real manufacturing challenge, but a true culinary innovation. With its smooth blade, the XFETTA Kitchen mandolin is particularly well suited to slicing Italian white truffles, which have a delicate, thin skin.
This top-of-the-range Kitchen mandolin has an original , slender shape with rounded corners to ensure an excellent grip. What's more, its handle is embossed with the mandolin's signature motif, with great attention to detail.
A suspension eye is also visible at the end of the handle, allowing you to hang the Kitchen mandolin above your work surface. This eyelet is also shaped like a Kitchen mandolin, adding to its sleek design.
This Kitchen mandolin was developed by Ambrogio Sanelli in partnership with Italian chef Davide Oldani. The Michelin-starred chef imagined a Kitchen mandolin in keeping with theexcellence that truffles represent. The XFETTA gift set includes 3 accessories to facilitate use and storage of the truffle Kitchen mandolin, starting with the protective glove. The glove is reinforced on three fingers (thumb, forefinger and middle finger) so that you can cut truffles without your fingers slipping on the cutting edge of the blade. The truffle glove is a one-size-fits-all model for the right hand.
A truffle brush is also included. Its bristles are made from 100% natural Tampico fibers, extracted from the Mexican agave lechuguilla plant. The bristles are extremely soft and have a high water absorption and retention capacity. They are ideal for cleaning truffles without damaging them.
Last but not least, the set includes a storage stand for the Kitchen mandolin. Made from walnut, it is sturdy and moisture-resistant.
