You need to know how this knife is produced to understand its excellent cutting quality. Tamahagane uses VG5 steel to design the core, a steel with many of the same qualities as VG10 steel. VG5 is, however, more resistant to corrosion. The carbon content is between 0.7% and 0.8%, making it even more robust. This hard, solid VG5 steel core is overlaid with a softer steel to establish a perfect balance between hardness and flexibility. This softer steel forms small, typically Japanese patterns - the 63 layers of damascus- offering a highly aesthetic style. As well as being attractive, it is above all extremely sharp, enabling you to be quicker in the kitchen and take intense pleasure in cooking.
These different properties give the blade an HRC hardness of 59 on the Rockwell scale. This hardness is a guarantee of quality: the need for sharpening will be much less recurrent than on a conventional knife, as the cutting edge will be more durable.
The knife handle is made of stainless steel, which resists corrosion and does not absorb bacteria, making it easy to clean with a simple wipe. The originality of the knife lies in its design: the lines of a bamboo stalk have been taken and the handle shaped to resemble the bamboo stalk, recalling the knife's Japanese origins.
