Description

Designed for long, clean cuts, the 24cm Yuzo Black AShandcrafted Japanese sujihiki knife bringsJapanese craftsmanship to the forefront of precision! Made in Japan by Tsunehisa, it features a slender 24cm blade, a dark, handcrafted finish, and an authentic-looking charred oak handle. This handcrafted Japanese knife effortlessly slices through meat, fish, roasts, and poultry with fluid motion.

Long cut, controlled grip

The 24-cm blade follows the profile of the Japanese sujihiki knife: long, thin, and designed to produce even slices in a single continuous motion. Its San Mai construction consists of three layers of steel stacked on top of one another. At the center, the core of Japanese Aogami Super steel, enriched with approximately 1.5% carbon, provides a very sharp edge and excellent cutting precision. Its hardness of approximately 65 HRC ensures excellent edge retention, allowing the blade to remain effective over time with proper sharpening.

The outer layers of stainless steel protect the carbon core and provide a welcome balance to the overall design. The rough forged finish reinforces the blade’s traditional character, while the hammered pattern creates a distinctive visual texture.

Unique handle suitable for all cooks

The handle is crafted from charred oak, a material chosen for its dark, natural appearance. This finish highlights the wood’s natural tones and complements the rough-forged blade to create a piece with a distinct Japanese style. Its octagonal shape provides a stable, comfortable grip, allowing you to guide the blade with precision during long cuts.

Preserving the blade over time

The Aogami Super core contains carbon, so it requires careful maintenance. Wash the blade by hand with a soft sponge, then dry it immediately with a clean cloth. Avoid the dishwasher, prolonged soaking, and abrasive surfaces. Store this knife in a dry place, ideally in a knife sheath or on a suitable knife rack. To maintain its sharpness, sharpen it with a water stone.

Tsunehisa, Japanese forge

Tsunehisa is a Japanese cutlery brand known for its handcrafted kitchen knives in a variety of styles. Its designs often feature high-performance Japanese steels, traditional construction methods, and distinctive finishes, such as forged-finish or hammered finishes. For this Yuzo Black AS line, the forge works with Aogami Super steel in a San Mai structure to create a blade that is hard, precise, and protected by stainless steel sides.
