This kiritsuke knife is handcrafted in Japan by Tsunehisa Cutlery. A small team of skilled experts handcraft quality Japanese kitchen knives!
The Japanese kiritsuke knife is a versatile model that enables you to make a wide variety of cuts. With it, you can mince your meat, chop your herbs or slice your vegetables with ease! The kiritsuke's special tip allows you to work with greater precision. Be careful not to use it on hard foods such as squash or bones.
A Japanese kitchen knife with an elegant hammered blade
This Japanese knife features a damascened blade, an ancestral method of forging a rigid steel core which is then covered by several layers of softer steel. This process balances the blade's hardness while protecting its core.
In fact, this blade's core is made of 440C steel. This is a tough, durable alloy that contains around 1% carbon, the element that increases a steel's hardness. The hardness of this blade is 59HRC on the Rockwell scale, guaranteeing your handcrafted Japanese knife excellent edge retention and cutting efficiency!
440C steel also contains around 17% chromium, which increases its resistance to corrosion! However, this blade has a high carbon content and therefore requires careful maintenance to avoid any risk of oxidation.
Finally, the damascus is complemented by multiple layers of softer stainless steel covering the core. These make your Japanese kitchen knife more supple (without becoming brittle), so it's less likely to break during use. Damascus also provides extra protection for the core of your blade!
What's more, damascus is also a real aesthetic advantage! The superimposition of different layers of steel forms elegant patterns of fine waves unique to each Yuzo knife. These random patterns add elegance to your handcrafted knife.
The surface of your blade is also lightly hammered to give it character. These pitted patterns are similar to drops of water that have splashed onto the cutting surface.
An ergonomic handle for this handcrafted Japanese knife
The handle of your damask knife is made from smoked oak, a durable and robust species. This wood has a high density to better resist shock, vibration and humidity (which prevents warping). This baikoku oak has benefited from a smoking process that gives it a darker hue, highlighting its natural grain for an authentic appearance.
Octagonal in shape, it fits the hands of all cooks: left-handed and right-handed alike! It provides an ergonomic grip for optimum comfort of use, especially during extended cooking sessions.
Last but not least, wood paste has been added where the blade joins the handle to ensure a watertight seal. This fills small gaps to prevent water or small food items from seeping through.
To care for your Damascus knife, wash only by hand with a sponge and mild detergent, avoiding getting the handle wet. Once washed, dry immediately to remove all moisture and store in a dry place. Do not put in the dishwasher or leave to soak in the sink.
