The sujihiki knife is the Japanese equivalent of the slicing knife. It is ideal for making thin slices of vegetables, meat or fish. Its long, tapered blade makes it effective on both raw and cooked foods. The model presented here features a kiritsuke-shaped tip, adding to its efficiency and elegance.
The Kiryu company, founded in 1927, is behind this range of Japanese knives. It was a forerunner in Japan, being the first to mass-produce knives in stainless steel, a material then just imported from Europe. Kiryu has preserved the expertise of the ancient Japanese blacksmiths it inherited: they made knives by hand to guarantee superior quality.
Your Yuzo Hamono Japanese knife features a damascus steel blade that combines a rigid steel core with several layers of softer steel that cover it. This method strengthens the core while balancing the blade, making it more flexible and less brittle.
Damascus is also popular for its aesthetic appeal! The different layers of steel are superimposed on the blade, creating magnificent wavy patterns that give each knife a unique appearance.
The core of this blade is made of Japanese VG10 steel, a top-of-the-range alloy widely appreciated in the kitchen for its excellent properties. With its carbon content of around 1%, it gives the blade great hardness. This handcrafted knife achieves a hardness of 60 HRC on the Rockwell scale, guaranteeing an efficient, long-lasting cutting edge and reducing the frequency of sharpening.
VG10 steel contains 15% chromium, giving it excellent corrosion resistance. However, it is essential to take good care of your damascus knife to avoid any risk of oxidation.
The VG10 steel core is then covered with several layers of steel that act as a protective shield and reinforce its strength.
Finally, the blade features authentic engraved kanji and has been elegantly polished.
The damascus knife's handle is made of olive wood, renowned for its strength and long life. This dense, moisture-resistant wood retains its shape even in the presence of condensation. What's more, olive wood sports a light hue and distinctive grain on each piece, creating a much-appreciated natural contrast.
A black horn bolster has been added to elegantly link the handle to the blade of your Yuzo knife. This bolster is highlighted by a white micarta ring, adding a touch of sophistication. Note that since horn is a natural material, its appearance may differ slightly from one knife to another.
The handle of this knife is octagonal to suit all cooks, right- or left-handed. The ergonomic handle ensures perfect handling, even when cutting intensively.
Finally, wood pulp has been used to fill the small gaps where the blade attaches to the handle. This ensures a better seal to prevent water penetration.
To preserve the quality of your handcrafted Japanese knife, it is essential to clean it exclusively by hand with a soft sponge and a suitable soap. After washing, be sure to dry it immediately to protect it from moisture. Avoid putting it in the dishwasher or soaking it in the sink.
