Description

The santoku knife Yuzo Hamono santoku knife is the Japanese equivalent of our Western chef's knife, perfect for a wide variety of cuts! With it, you can cut, chop and chisel a wide range of foods, from fruit and vegetables to meat and herbs. Its efficient blade makes cutting effortless.

This range of Japanese knives was designed by the Kiryu company, founded in 1927. Created in Japan, it was the first to mass-produce knives in stainless steel, a material just imported from Europe. It has inherited the know-how of Japanese craftsmen of the Edo period, who forged high-quality, finely-worked knives by hand.

A high-performance blade in VG10 Japanese steel

This Yuzo knife features a blade with a damascened structure. This technique consists of forging the core of a rigid steel blade, which is then surrounded by several layers of steel. This process protects the core, while creating a balanced, more flexible blade (in the sense of being less brittle).

What's more, damascus is a real aesthetic asset! You can observe the superimposition of the different layers of steel all over the surface of your blade: random fine waves are drawn to form patterns unique to each piece.

Japanese VG10 steel has been selected for this blade, a high-end alloy often used in the kitchen. It has a high carbon content of around 1%, the essential element for increasing blade hardness. In fact, the hardness of this Japanese knife is 60HRC: the cutting edge performs well and remains durable, allowing you to space out your sharpening sessions.

The VG10 alloy also contains 15% chromium, guaranteeing greater resistance to corrosion. However, this blade is still composed of a high carbon content and therefore requires careful maintenance to avoid oxidation.

As explained above, the VG10 core is coated with several layers of stainless steel to protect it and make your blade resistant.

Finally, the blade of your damascus knife has been polished.

A robust yet elegant olive wood handle

The handle of this handcrafted knife is made of olive wood, a robust species known for its high durability. It is a dense, antibacterial wood that resists humidity well, and is therefore difficult to warp with condensation. Olive is also appreciated for its light color and contrasting grain, as well as for its characteristic fruity scent.

It is complemented by a black horn bolster, which is also highly resistant. What's more, the bolster is set with a white micarta ring that adds a touch of finesse to your kitchen knife. Note that horn being a natural material, the appearance may vary slightly from one piece to another.

The handle is octagonal in shape to suit the hands of all cooks, whether right- or left-handed. It offers an ergonomic grip for optimum maneuverability, especially during long-duration use.

To fill the small gaps where the blade fits into the handle, wood putty has been added. It makes the whole thing watertight, preventing water or small food items from slipping inside.

To care for your santoku knife, wash only by hand with a non-abrasive sponge and mild detergent. Once washed, dry immediately with a soft cloth and store in a dry place away from moisture. Do not soak your knife in water, and do not use the dishwasher.
