Founded in the 50s, Sakai Takayuki is based in the town of Sakai, renowned for its cutlery. Historically, Sakai was famous for being the place where the katanas worn by the samurai were made.
Inspired by these traditions, Sakai Takayuki developed new techniques that are used today. Drawing on its expertise and know-how, this company offers high-quality Japanese knives adapted to the needs of professionals and private individuals alike.
The nakiri knife is a typically Japanese model designed for cutting fruit and vegetables. With it, you can make all kinds of cuts: sticks, slices or dices with ease! Its wide blade lets you move slices around with ease.
A damask knife with an efficient cutting edge
This nakiri knife features a damascened blade, the result of a structure comprising a hard steel core surrounded by several superimposed layers of softer steel. These damascened patterns add a much-appreciated aesthetic appeal to the blade.
Beyond its visual appeal, damascus also gives the blade optimum balance. Its core is made ofJapanese VG10 steel, an alloy with around 1% carbon, treated by an ice-hardening process. The high carbon content increases the alloy's hardness, reaching 60HRC on the Rockwell scale: a blade with a high-performance cutting edge!
What's more, VG10 alloy contains around 15% chromium, offering enhanced corrosion resistance. However, due to its high carbon content, it is essential to maintain this blade with care to avoid oxidation.
The blade's rigid core is enveloped by 33 layers of softer steel that form the damask pattern. These layers balance the hardness of the core by providing additional flexibility to prevent your blade from becoming too brittle. The outer layers make the blade less vulnerable to micro-shocks when cutting, reducing the risk of breakage.
The surface of the blade is hammered, creating a visual contrast with the different damascus layers. This hammering also has a practical function, as, like the dimples, it prevents food from sticking to the blade during cutting.
An ergonomic wooden handle for all hands
This Japanese kitchen knife features an ergonomic, Western-shaped handle for optimum grip. The base of the handle is fitted with a finger rest for added comfort, especially during prolonged handling.
Made from Spanish mahogany wood, the handle has a glowing brown hue. The wood's unique veins lend a distinctive touch to each piece. Despite its lightness, mahogany is a durable, shock-resistant species, protected by a layer of transparent woodstain.
A stainless steel bolster joins the blade to the handle. Complemented by 3 stainless steel rivets, the handle is firmly attached to the full tang blade, guaranteeing the reliability of your Sakai Takayuki knife.
To care for your damask knife, wash only by hand with a soft sponge, avoiding wetting the handle. Once washed, wipe dry immediately and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
