A damascus knife in VG10 steel
Featuring a damascened blade, this Sakai Takayuki knife is designed with a rigid alloy core, wrapped in softer layers of steel, creating a unique visual pattern. Beyond its aesthetic appeal, the damascus pattern gives the blade optimal balance and provides protection to the core.
However, the damascus pattern is not simply a matter of aesthetics: it also plays a crucial role in optimizing your blade! The core is made ofJapanese VG10 steel, a quality alloy with a high carbon content of around 1%. The core is hardened using a low-temperature cooling process, giving a remarkable hardness of 60HRC on the Rockwell scale.
VG10 steel also contains around 15% chromium, which makes it highly resistant to corrosion. However, due to its high carbon content, your blade must be carefully maintained to avoid oxidation.
The rigid core is enveloped by 33 layers of softer steel, which are superimposed to form the damascus. This composition aims to balance the hardness of the core by providing more "flexibility", thus preventing the blade from becoming brittle. Thanks to these outer layers, the blade is less sensitive to micro-shocks when cutting, thus reducing the risk of breakage.
The surface of the blade has been hammered to create a contrasting effect with the different damascus layers. This hammering is very practical, as it acts like honeycombs and prevents your food from sticking to the walls of your blade when cutting.
A modern, elegant wooden handle
This Universal knife features an ergonomic, Western-style handle for optimum grip. A finger rest at the base of the handle completes the design for ease of use, particularly during prolonged use.
Made from Spanish mahogany wood, the handle has a reddish-brown hue and is distinguished by its sturdiness. As wood is a living material, the veins on the handle are unique! Although mahogany is light, it is shock-resistant, reinforced by a layer of transparent varnish.
A stainless steel bolster links the blade to the handle. In addition, 2 stainless steel rivets secure the handle to the full tang blade. This Japanese knife combines aesthetics and reliability for safe use!
This Japanese knife should only be washed by hand. Do not put in the dishwasher, nor leave to soak in the sink. When washing, take care not to get the handle wet, and use a mild soap with a non-abrasive sponge. After cleaning, dry the knife thoroughly and store it in a dry, moisture-free place.
