Opt for Japanese design perfection with this Tamahagane Tsubame chef's knife!
Japanese know-how is brought to the fore in this Tsubame range. Did you know that tamahagane is a Japanese steel used in the manufacture of swords? The sharpness of these Japanese swords is well known and speaks volumes about the quality of Tamahagane brand knives.
The blade of this chef's knife measures 15cm: you won't find a smaller size in the chef's knife category. A small chef's knife with a wide blade can be useful for certain tasks involving fruit, vegetables or meat.
This knife's formidable cutting edge will win you over from the first time you hold it. Made from VG5 steel, this blade is enriched with 0.7% to 0.8% carbon, giving it extreme hardness. This hardness means it needs sharpening less frequently than standard steel blades, and the cutting quality is much better. It should also be noted that it wears less quickly than other blades (which iswhy sharpening is less frequent). VG5 is very similar to VG10, but is slightly more resistant to corrosion, even though it is far from stainless. Rockwell hardness is 61 HRC, requiring step-by-step sharpening with a 3000/8000 grit, preferably double-sided Sharpening stone. This solid core is covered with a softer steel to balance hardness and flexibility.
Hammering the blade is both aesthetic and ergonomic. In fact, the small recesses act as honeycombs: as you cut your food, you'll notice that it won't stick to the blade, making your work more productive and enjoyable.
The knife handle is made from a mixture of paper and resin called micarta. This material is appreciated for its sturdiness and anti-bacterial properties. Each handle has a different black and gray veining: buying a Tamahagane knife is the assurance of owning a unique knife! The knife is easy to care for by hand, simply wiping it clean with a sponge and a soft cloth.
This chef's knife has the undeniable qualities that professionals and homeowners have been waiting for, and you'll quickly fall in love with it. Store your Tamahagane Tsubame knives on a magnetized bar for decorative display!
