Description

An efficient and refined Japanese knife

The Grand Chef Seigaiha 8cm paring knife from Sakai Takayuki has a small, full-blooded blade designed for precision in everyday use. Made in Seki, the stronghold of Japanese cutlery, it combines visual tradition with modern performance.

Its short blade features the Seigaiha motif, an ancestral Japanese design that appeared in the 6th century to represent seas and oceans on nautical charts. "Seigaiha" literally translates as "blue sea and waves". On this damask blade, the ripples are a contemporary interpretation of waves on the high seas, symbolizing strength, continuity and serenity. This strong aesthetic motif makes each piece unique and meaningful.

A compact blade ideal for fine cuts

This Sakai Takayuki Japanese paring knife has an 8cm blade that is perfect for peeling, carving, trimming or chiseling fruits, vegetables or herbs with precision. Its kengata shape, which means "sword-like", offers a slightly narrower, slightly curved edge, which facilitates the swinging cutting motion and offers great precision in small gestures.

The blade features a core of Swedish Böhler stainless steel, an alloy renowned for its purity and strength. It is surrounded by 44 layers of stainless steel, creating a superb 45-layer damascus finish. These layers are both heart-protecting and aesthetically pleasing.

The edge of the blade has a flat cutting edge for a clean, controlled cut. With a hardness of around 60 HRC, the blade retains its sharpness for a long time, even with regular use. The mirror polish enhances the Seigaiha pattern and facilitates blade insertion into food.

A practical, well-balanced hybrid handle

The 9.4cm handle has a hybrid shape for a comfortable, precise grip:

  • Western oval shape: close to the bolster, to provide a soft, natural grip
  • Japanese octagonal shape: moving towards the heel, for firmer control

Made from black Pakkawood, the handle is moisture-resistant, stable and pleasant to the touch, perfect for meticulous work. Pakkawood is a composite material made from a mixture of wood and resin compressed under heat.

The handle is complemented by a stainless steel bolster and heel for added balance and strength. This knife is ambidextrous, and can be used with fluidity whatever your dominant hand.
