The elegant, high-performance all-purpose Japanese knife
The Seigaiha Sakai Takayuki kengata Grand Chef universal knife is your everyday ally, as beautiful as it is effective. Manufactured in Seki, the Mecca of Japanese cutlery, it combines a precision blade, traditional design and high-performance materials.
The blade features the Seigaiha motif, an ancestral Japanese design used since the 6th century to represent seas and oceans on nautical charts. The word "Seigaiha" translates as "blue sea and waves", symbolizing strength, serenity and continuity. On the damascened blade, this motif takes the form of stylized waves on the high seas, bringing a singular aesthetic to each knife.
A sturdy, easy-to-handle blade
This Sakai Takayuki all-purpose Japanese knife has a 15cm blade, ideal for a wide variety of cuts: vegetables, fruit, herbs, small pieces of meat or fish. Its kengata shape, inspired by Japanese swords ("kengata" means "sword shape"), gives it a narrower, slightly curved edge, ensuring a rocking motion and rapid gestures.
The blade core is made of Swedish Böhler stainless steel, a high-quality alloy known for its purity, strength and corrosion resistance. It is wrapped in 44 layers of stainless steel, forming a 45-layer damask that protects the core while magnifying the blade.
Theflat wirecutting edge ensures a clean cut through food, and the hardness of around 60 HRC guarantees prolonged edge retention. The blade is mirror-polished, highlighting the Seigaiha pattern and making it easier for the blade to glide over food.
A comfortable, stable hybrid handle
The 9.4cm handle has been designed for comfort, stability and precision. It is made of black Pakka wood, a moisture-resistant composite of wood and resin compressed under heat. The handle is pleasant to the touch and built to last.
The hybrid shape of the handle is the result of two influences:
- Oval (Western) at the bolster: for a soft, ergonomic grip
- Octagonal (Japanese) towards the heel: for a firm, precise hold
