Description

An efficient and refined Japanese knife

The Sakai Takayuki 24cm Grand Chef Seigaiha slicing knife has been designed for those seeking finesse and mastery when cutting meat and fish. Manufactured in Seki, the Mecca of Japanese cutlery, it combines technical precision, aesthetic tradition and top-of-the-range materials.

The blade of this sujihiki features a magnificent Seigaiha motif, a traditional Japanese design that appeared in the 6th century to represent seas and oceans on nautical charts. "Seigaiha" literally means "blue sea and waves" and symbolizes peace, strength and continuity. The pattern comes to life on the damask blade in the form of stylized waves on the high seas, offering a visual that is both elegant and charged with meaning.

A long, precise blade for clean cuts

This 24cm sujihiki Grand Chef Seigaiha is a Japanese slicing knife, perfect for clean cutting of meats, fish fillets or large pieces, without tearing fibers. Its long blade allows for fluid cutting in a single movement, for a clean, professional finish.

The heart of the blade is made ofSwedish Böhler stainless steel, renowned for its purity, strength and resistance to corrosion. It is then enveloped in 44 layers of stainless steel, creating a superb 45-layer damascus. This construction ensures blade protection, flexibility and cutting performance.

The wire'sflat cutting edge guarantees a clean, controlled cut. At around 60 HRC on the Rockwell scale, the blade offers excellent edge retention. Finally, the mirror finish enhances the Seigaiha pattern while facilitating the blade's glide over the food, reducing friction and resistance during cutting.

A comfortable, easy-to-handle Pakkawood handle

The 11cm handle is made from black Pakkawood, a composite material of laminated wood and hot-compressed resin. It offers high resistance to humidity, enhanced stability and a comfortable grip.

Its hybrid shape is well thought-out:

  • Near the bolster: oval, in the Western style, for comfortable, secure support
  • Towards the heel: octagonal, in the Japanese tradition, for firmer, more precise control

A stainless steel bolster and heel complete the handle, guaranteeing extra strength and optimum balance. Suitable for both right-handed and left-handed players, for smooth, natural use, even over long sessions.

Caring for my Japanese knife

Hand-wash only, with a soft sponge and lukewarm water. Dry immediately with a soft, clean cloth. Never leave it to soak, and never put it in the dishwasher. To preserve its sharpness and damascus finish, store the knife in its case, a sheath, a block or on a magnetic bar.

The expertise of Sakai Takayuki

The Sakai Takayuki brand is a benchmark in Japanese cutlery. It combines the ancestral heritage of Sakai, the city of sword smiths, with the technical expertise of Seki, the modern blade capital. This Sakai Takayuki carving knife is the result of a meticulous process, in which each blade is carefully crafted. The Grand Chef Seigaiha range perfectly illustrates this tradition: cutting-edge materials, a design steeped in history, and high cutting precision.
