Description

A versatile Japanese knife with a traditional soul

The Sakai Takayuki Grand Chef Seigaiha 19cm chef knife combines precision and elegance. Designed in Seki, the modern cradle of Japanese cutlery, it is the fruit of a meeting between performance, tradition and aesthetics. Its kengata shape, as rare as it is technical, makes it a unique addition to your kitchen. "Kengata" means "sword-like": the blade's profile is narrower and slightly curved, which favors a rocking motion when cutting.

The blade of this knife features a magnificent Seigaiha motif, an ancestral Japanese design that first appeared in the 6th century and was used to represent seas and oceans on nautical charts. The term "Seigaiha" literally means "blue sea and waves", symbolizing peace, strength and continuity. This motif is transformed on the damascene blade into stylized waves evoking the high seas, giving each knife a distinctive, meaningful visual.

A versatile blade with a remarkable cutting edge

This Seigaiha Grand Chef gyuto knife features a 19cm blade. The gyuto is the Japanese chef's knife, perfect for slicing, chopping, chiseling and mincing. Its versatility makes it effective on meat, vegetables and fish.

The blade features a core of Swedish Böhler stainless steel, an alloy renowned for its purity, strength and resistance to corrosion. The core is coated with 44 layers of stainless steel, forming a 45-layer damascus pattern that is as aesthetic as it is protective.

The blade'sflat cutting edge guarantees clean, precise and even cuts. With a hardness of nearly 60 HRC, the blade retains its excellent cutting edge over time. Finally, the mirror finish enhances the Seigaiha pattern while improving glide over food.

A hybrid handle for a perfect grip

The handle measures 11cm and is made from black Pakka wood, a composite material of wood and hot-compressed resin. Pakkawood is stable, pleasant to the touch and perfectly suited to everyday use.

This hybrid handle features a Western-style oval shape at the bolster, for an ergonomic grip. It then changes to a Japanese octagonal shape towards the heel, for precise control and excellent grip. Suitable for both right-handed and left-handed users.

The stainless steel bolster and heel add to the knife's strength and balance.
