Japanese tradition and an exceptional blade
The Sakai Takayuki Grand Chef Seigaiha santoku kengata knife embodies all the elegance and precision of modern Japanese cutlery. It was made in Seki, a Japanese town famous for its cutlery heritage, and combines symbolic design, technical form and top-quality steel.
Its Seigaiha damascus pattern pays homage to Japanese tradition: it was inspired by the 6th-century drawing of waves on the high seas, used to illustrate seas and oceans on maps. Each blade becomes a useful work of art, combining aesthetics and performance.
A damascened blade for clean, precise gestures
The 18cm Grand Chef Seigaiha santoku features a versatile blade. Slightly curved, it allows you to cut with a fluid rocking motion. This ensures precise cutting of vegetables, meat and fish.
The blade contains a core of Swedish Böhler stainless steel, renowned for its structural stability and purity. This core is then coated with 44 layers of stainless steel, forming a 45-layer damascus that is both protective and visually impressive.
The blade's flat edge ensures a clean cut, while its hardness of around 60 HRC ensures excellent edge retention over time. The mirror polish enhances the Seigaiha pattern while facilitating the blade's glide over food.
A hybrid handle designed for comfort
The handle of this Japanese santoku knife measures 11cm and is crafted in black Pakkawood, a stable, moisture-resistant composite material (it contains wood and resin that have been heat-assembled), ideal for everyday use.
Its hybrid shape is ingenious: the part at the birth of the bolster is oval (Western style) for a soft, ergonomic grip, while the heel is octagonal (Japanese style), offering firm, precise control.
The handle is reinforced by a stainless steel bolster and heel, providing strength while balancing the grip for optimum comfort, even during long cutting sessions.
