Description

Designed to make everyday life easier, this handcrafted Japanese Hatsukokoro Hayabusa SG2 santoku knifeallows you to tackle a variety of cutting tasks, thanks to its versatility and practical medium size. Incidentally, “Hayabusa” means “peregrine falcon” in Japanese—a bird known for its remarkable speed. This knife is designed to be just like it: efficient and fast, transforming your cutting tasks with just a few simple strokes.

A precise and durable SG2 blade

At 18 cm, the blade is the perfect length for slicing, chopping, and dicing vegetables, meats, and fish.

Its San Mai construction features three layers of steel surrounding a core of SG2 powder steel. The SG2 is hard, while the outer layers are more flexible, creating a very well-balanced blade.

SG2 steel is a high-performance steel prized for its cutting performance and durability. It has a hardness of 63 HRC and contains approximately 1.3% carbon—properties that ensure excellent edge retention.

To maintain cutting quality, use the blade on a suitable cutting board made of wood or synthetic material. Avoid frozen foods and cuts that require force or leverage.

An octagonal handle made of stabilized wood

The stabilized wood handle is accented with a white inlay that contrasts with the wood. Stabilization involves impregnating the wood to improve its uniformity and resistance to changes caused by daily use.

This treatment preserves the wood’s warm appearance while resulting in a more stable handle. Its color variations make each piece slightly different.

Its octagonal shape offers an intuitive grip, suitable for both right- and left-handed users. It makes it easy to identify the knife’s orientation in the hand and adjust your grip according to the cutting motion.

Paired with an 18-cm blade, this handle accommodates the varied cutting motions expected of a santoku knife.
