Description

A santoku knife with a timeless and original design

This knife features a typically Japanese damascened blade structure. This technique consists of forging the core of the blade with a rigid steel, which is then covered with several layers of softer steel to create an optimal balance. This provides better protection for the core and makes the blade more supple and therefore less brittle in the face of micro-shocks.

What's more, damascus is a real aesthetic asset! The superimposed layers form elegant patterns that can be seen all along the blade. These patterns are unique to each piece!

The blade is made fromJapanese VG10 steel, a top-of-the-range alloy much appreciated in the kitchen. It has a high carbon content of around 1%. This is the element that is essential for increasing the hardness of an alloy, as high hardness retains its cutting edge for a long time and provides a high-performance cutting edge.

VG10 steel also contains around 15% chromium, providing your blade with corrosion resistance. However, this steel is still enriched with carbon and therefore requires careful maintenance to prevent oxidation.

To complete the damascus construction, 33 softer layers of steel are added. These protect the core and guarantee greater strength.

Finally, the blade of your knife has been polished to achieve an elegant mirror-effect finish. To add contrast to your blade, it has also been hammered in the traditional Japanese way. Hammering is also practical because, like honeycombs, it prevents food from sticking to the sides when cutting.

The handle of this Japanese knife is made from oak wood, a durable and solid species that stands the test of time! This wood is resistant to shock and vibration. As it is resistant to humidity, it does not warp easily with condensation. This wood has been lacquered in the Urushi style: an ancestral technique very popular in Japanese art, used on decorative objects. A black varnish is added to contrast with the rest of the handle, which is lighter, and golden tips are added to evoke a starry night. The whole knife represents Japanese poetry: contrasts symbolize day and night.

The handle is octagonal in shape, so it can be used by both right- and left-handed cooks. It gives you a comfortable, pleasant grip for perfectly controlled handling, particularly when used for long periods.

Wood paste is added to fill the small gaps where the blade meets the handle. This makes the whole assembly watertight, so that no small foodstuffs or water can seep inside.

An authentic Sakai Takayuki knife

The santoku knife is a multi-purpose model that lets you make a wide variety of cuts! With it, you can slice a wide range of foods such as vegetables, fruit, meat and herbs with ease. Its kiritsuke-shaped tip guarantees greater precision for small jobs. Be careful not to use it on hard foods such as squash or bones.

Sakai Takayuki offers a wide range of quality knives combining authenticity and modernity. The company was founded in the 50s and is located in Sakai, Japan. The company has many years' experience and has inherited the know-how of the Sakai region's old-time blacksmiths, who forged the famous katanas.

To care for your knife, wash only by hand with a sponge and mild detergent. After washing, dry it quickly and store it in a dry place. Do not use the dishwasher or leave it to soak in the sink.
