Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. A knife blade designed with the greatest care
The heart of the blade is made of 10Cr15CoMoV stainless steel. This top-quality alloy is internationally renowned for its durability and cutting performance (it can withstand a razor-sharp finish, for example). Its carbon content is 1.05%, giving it an excellent hardness of approximately 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids the need for regular sharpening.
The core of the blade is then surrounded by 67 layers of damascus. Damascus is a unique, ancestral method of laying various layers of steel (hard and soft) one on top of the other around the center of the blade. The hard steel reinforces the knife's strength, while the soft steel gives it a slight suppleness (making it less brittle, but not flexible!). Beyond its technical advantages, this method creates unique waves on each knife, which ripple across the cutting surface for a stunning visual effect.
The top of the blade has been press-hammered, creating unique waves and hollows on each blade. Beyond its aesthetic appeal, hammering is appreciated for increasing the knife's non-stick properties (a bit like honeycombing).
You can see that the brand name and range have been laser-engraved on the left-hand side of the blade, for even greater authenticity.
The knife's cutting edge is shaped like a "V". Food penetration is excellent. Final sharpening is carried out manually, on a leather strip at a cumulative angle of 30° (i.e. 15° on each side of the edge). Between the shape of the cutting edge and the cutting angle used, the result is formidable: you'll feel it from the very first use - no need to force it!
Last but not least, the blade has a mirror-polished finish for even greater elegance. What's more, this makes the blade more resistant to corrosion (because the high polish flattens the surface of the steel, making it less porous).
The handle is a central element of the Wusaki Damascus 10Cr knife, and is made of olive wood, sanded and then treated to make it soft and pleasant to work with. This precious wood, with its characteristic fruity scent, contrasts perfectly with the steel of the blade. Its veins are unique on each knife: prestige assured!
Each handle is unique! Colors, patterns and grain may vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
It has been designed in an original shape, to be very comfortable and fit very naturally in the palm. This allows the thumb and forefinger to retain their full strength during use, for absolute control of the knife. Finally, Wusaki handles are slightly longer than the current cutlery market average, to accommodate larger hands.
The base stamped with the Japanese character"Tiger" gives the knife an authentic finish. Its sandblasted appearance contrasts with the smooth surface of the surrounding steel. The three red edgings add an extra touch of elegance. The detail that changes everything! Caring for and storing your Bread knife
Each Wusaki knife comes in a high-quality box that protects it from knocks. The elegant black box makes it easy to give as a gift.
Please note: on receipt, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
Care: we recommend gentle hand-washing in lukewarm water with a neutral soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of the hammering and the weight of the knives. It's best to store knives in a block or Bag!
