The Misono 440 24cm sujihiki Japanese knife is your ally for clean, precise cutting of large cuts of meat, fruit and vegetables!
The knives in the 440 range are made from 440C steel. This alloy offers excellent corrosion resistance. It is a stainless steel similar to the well-known VG10. However, it has been enriched with molybdenum and chromium. This robustness against corrosion is one of the reasons why Misono 440 knives are so appreciated by professionals in the food industry.
The sujihiki knife is the Japanese equivalent of the carving knife. Its long blade is ideal for cutting large pieces of meat, fruit or vegetables such as pineapple.
The 24cm blade of the sujihiki knife offers an asymmetrical cutting angle. This enables clean, easy penetration of flesh for efficient cutting without damaging it.
It has a hardness of 58/59 HRC on the Rockwell scale for a cutting edge that lasts over time. It should be pointed out that the knife needs to be sharpened a little longer because of its high chromium content (which, on the other hand, makes it highly resistant to corrosion).
Brand logos are applied to the cutting surface for a perfect finish.
The ergonomic handle provides a comfortable grip. It is made of Pakkawood, a composite material of resin and wood. It is both robust and aesthetically pleasing. It is resistant to temperature variations and humidity.
The slightly recessed handle makes it easy to grip, and allows for a controlled gesture whether you're right- or left-handed.
Three stainless steel rivets are set into the handle. They consolidate the full tang blade (which extends to the end of the handle). A stainless steel bolster adds balance to the overall knife.
To care for this knife, wash by hand, preferably with a soft sponge and washing-up liquid. Wipe dry before storing.
Misono brand:
Misono was founded in 1935 as a small family business specializing in kitchen peelers. Based in Seki, the capital of Japanese cutlery, the company diversified into the production of kitchen knives from the 1960s onwards.
Today, Misono is considered the oldest manufacturer of Western-style knives in Japan.150,000 knives a year are made 100% by the brand's experts (whereas many producers of this size have certain parts of their knives made by other, more specialized companies).
Misono's knives are inspired by the techniques of Japanese master blacksmiths. Many steps in the manufacturing process are carried out entirely by hand.
Whether you're a seasoned chef or a hobbyist, this Misono knife is the ideal knife for cutting large pieces. Its timeless, authentic design will never tire you!
