The Misono UX10 18cm with granton edge Japanesesantoku knife boasts exceptional features that make it one of the most durable knives on the market!
A few words about the blacksmith:
Misono was founded in 1935, in the town of Seki, internationally renowned for its knife-making expertise. The brand originally specialized in the manufacture of kitchen peelers. In the 60s, it diversified into knife design.
Misono is now reputed to be the oldest manufacturer of Western-style Japanese knives. 50 experts are employed to manufacture 150,000 pieces each year. Note that Misono manufactures 100% of all parts of the knife (whereas it's true that many producers of this size have certain parts of their knives made by other, more specialized companies).
Misono's production techniques are inspired by those of Japanese master blacksmiths, and many steps are carried out by hand. Misono knives are now appreciated the world over, and top chefs have no hesitation in acquiring them.
This santoku knife is part of one of the brand's best ranges: the UX10. UX10 knives offer the highest edge retention of any range.
The blade
The blade of this 18cm santoku is made of top-quality Swedish stainless steel, providing excellent resistance to the effects of corrosion.
It also provides a long-lasting cutting edge. In fact, as mentioned above, Misono UX10 kitchen knives have the longest edge retention of any of the brand's ranges. If necessary, you can sharpen the edge using a Japanese Sharpening stone.
It has a hardness of 59/60 HRC, the right compromise for easy sharpening and a long-lasting edge.
The honeycombs on the blade prevent food from sticking to the blade, facilitating fast, easy cutting with a rocking motion.
The knife's cutting edge is asymmetrical, without being one-sided. This makes cutting much easier: the blade fits perfectly into the flesh, slicing it delicately.
Finally, the brand and range logos have been applied to the cutting surface.
The handle
Thanks to its materials and shape, the handle is ideally suited to Western use (hence its worldwide use). It is made of lightweight black Pakkawood. Its ergonomic shape is ideal for comfortable long-term use. Pakkawood is an antibacterial material widely used in the kitchen, as it is resistant to temperature variations and humidity.
The shape of the base is slightly recessed for greater control when handling the knife. The 3 rivets and bolster are made of nickel silver, an alloy combining copper, nickel and zinc, appreciated for its hardness and resistance to oxidation. Its appearance does not differ from the steel of the blade, to ensure continuity with the blade.
The bolster balances the knife, while the rivets hold the handle's Pakkawood perfectly to the full tang blade (which extends to the end of the handle).
How to care for the knife
Although perfectly suited to professional use, manual cleaning is recommended. Wash your knife with a soft sponge and washing-up liquid. Then wipe with a dry cloth and store in a place away from sources of moisture.
