Takeshi Saji R2 Damascus Mosaic Japanese knives are handcrafted by blacksmith Takeshi Saji san.
He is an expert in this field, having worked in it for over 50 years. He has built up a fine reputation in the cutlery industry.
His knives are renowned for their finesse and aesthetic appeal. He elegantly and efficiently combines the old-fashioned techniques of traditional blacksmiths with timeless designs. In fact, he was certified as a "master traditional craftsman" in the 90s, a true guarantee of his expertise.
He works in a workshop in the Takefu Knife Village. It's a renowned place where blacksmiths considered traditional gather to keep ancestral know-how alive. They continue to train the new generation in this way.
The Takeshi Saji R2 Damascus Mosaic 17.5cm santoku knife is a typically Japanese model. Its versatility makes it ideal for everyday use. With it, you can cut fish, meat (all boneless, of course), fresh herbs... You'll enjoy it like a chef's knife.
An aesthetic, efficient blade:
The blade is damascened, i.e. constructed from several superimposed layers of steel. At the heart of the knife is a layer of stiffer steel, followed by several layers of softer steel to soften the core and make the blade less brittle in use.
For this particular knife,R2 Japanese steel(also known as SG2) is used. This is a stainless alloy produced by powder metallurgy. Expensive and rare, it is rarely found in cutlery. Blacksmiths like to work it and users appreciate its performance.
With a hardness of 63 HRC on the Rockwell scale, it has a long-lasting cutting edge that lets you keep on cutting. Even with such hardness, it remains very easy to maintain with a whetstone.
A final advantage of this alloy is its purity. Microscopically speaking, its structure is very homogeneous, which makes it more resistant. For example, it is less likely to chip during use.
The blade is then surrounded by several layers of nickel steel and stainless steel, which, as previously mentioned, add balance to its extreme rigidity. The result is a blade with an original visual character.
A refined handle:
The handle is made of beautiful ironwood. It is hard and dense. The ironwood has warm tones with attractive lighter shades. The veins are unique to each knife, so no two will be the same!
The full tang blade is attached to the handle by 3 rivets. The central rivet features an attractive mosaic pattern that not only adds a unique and original touch, but also contrasts beautifully with the darker wood color.
The stainless steel bolster forms the junction between the handle and the blade. This knife is perfectly suited to ambidextrous use.
It comes in a beautiful wooden box, a real plus if you want to give it as a gift.
Good knife care:
The knife should not be put in the dishwasher. It should be washed by hand in lukewarm water, using a sponge and a mild detergent. Once washed, wipe with a soft cloth to remove all traces of moisture, then store.
Due to the origin of the knives and the capacity of the blacksmith, who performs all operations by hand, quantities are limited.
